Arroz con pollo tonight.

Arroz con pollo tonight.
Mrs bearfan and I both have colds. Some really hot arroz con pollo can help us to sweat it out. Here it is:

Brown a family pack of chicken drumsticks. They don't have to be all the way cooked. Dice up 3 green peppers(coarse) 2 red onions and 2 garlic cloves. Open a can of whole tomatoes. In a large pot fry some rice(about 3/4 of a cup) in extra virgin olive oil until it starts to get lightly brown. Add the onion and green pepper. Cut the tomatoes into quarters. Add them, the chicken, the garlic, and 4 or 5 cans of chicken broth. Simmer very slowly for about an hour to an hour and a half with a lid on it under a low to medium flame. Do not stir. Quite tasty and good when you have a cold.

2. Hrumph.. you left out the peas
I don't have the recipe, but my Cuban grandmothe made the best arroz con pollo..and a magnificent dish called boliche..(stuffed eye of round roast.. (it had pockets cut into it stuffed with garlic/pimiento/and other goodies..)..

and she made the best flan in the world.. she made it in the old shallow coffee cans..

Wish I had gotten those recipes :(

3. I love it but I am really lazy and prefer not to pick bones
so we make it in the crockpot while we are at work...

It is divine...and you can start with frozen chicken breasts if you don't expect to be home for 10 hours....
