Downeast Maine Pumpkin Bread
Whether you like pumpkin or not, I guarantee you will love this bread. It is great just out of the over or cold, with or without butter. (I personally like it best 10 minutes out of the oven with butter).

Downeast Maine Pumpkin Bread
1 (15oz) can pumpkin puree
4 Eggs
1 c. vegetable oil
2/3 c. water
3 c. white sugar
3 1/2 c. all-purpose flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves
1/4 tsp. ground ginger

1.) Preheat oven to 350 F.
2.) Grease and flour three 7x3 inch loaf pans.
3.) In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar
4.) In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
5.) Stir the dry ingredients into the pumpkin mixture until just blended.
6.) Pour into the prepared pans.
7.) Bake for about 50 minutes. As with most, loaves are done when toothpick comes out clean.

2. It does freeze well
It's nearly cake-like in consistency. Perfect for Thanksgiving. I hope you enjoy it.

6. I have similar recipe called Shaker Pumpkin Loaves
From a kick ass cookbook I have, Country Inn Bed & Breakfast Cookbook (I honestly use this one more than Joy of Cooking! Not a bad recipe in here)

Shaker Pumpkin Loaves - 325 oven

2 c. sugar
1 c. butter melted (2 sticks)
3 eggs
2 c. pumpkin

2 c. flour
1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg

In mixing bowl beat sugar and melted butter to blend. Beat in eggs one at a time, until light and fluffy. Then beat in pumpkin. In a separate bowl, sift together flour, salt, soda, baking powder and spices. Beat this mixture into the pumkin mixture. Divide batter between loaf pans (can make up to 3 small) or put in muffin tins. Bake at 325 for 55-60 minutes.
