Best uses for leftover roast beef?

It was a damn fine cut of meat, too. We're thinking hash
and stew.

Any other ideas among this very creative group of folks?
(Yes, I'm sucking up, but dangit, I'm not the cook in the
family but I got left with about 6lb of beef and I'm clueless
about what I'm supposed to do with it.)

1. Beef Stroganoff
cook up some wide egg noodles

take an onion and a bunch of mushrooms and saute in butter til soft

you can use sherry or red wine or tomato juice for the liquid add to onions and mushrooms and let cook down some

add pepper, basil and your meat and heat til hot all the way thru

once the liquid is cooked down and the noodles are done, add 8 oz of sour cream and fold into the meat mixture over LOW LOW heat (do NOT let it boil) serve immediately over noodles

Yummm!! I have also used dried onion soup mix with some water or some beef stock (my secret ingredient is the Basil)

4. We have this bakery here in Portland that
makes European-style bread -- you know, the kind you need
teeth to eat, not this soft Wonder bread stuff. They have
an olive palmetto loaf that's just to die for.

That'd be purrfect.

12. The stroganoff was marvelous.

My mother, of course, did it her way -- no basil,
milk instead of tomato juice, cream of mushroom
soup in addition to the sour cream -- but still it
was very, very good.

I tried. It was like trying to get a cat to do
cartwheels. "I don't like it with tomato juice."

5. Why change a good thing?
If we ever have left over Roast Beef, I slice it thin and serve in with hot gravy over bread for open faced sandwiches. Knorr brand makes decent gravy from a packet.

8. freeze a couple of 1 pound portions for a couple or three weeks
down the road.

cube up about a pound and make soup

slice thin, then into strips and make a Thai Beef Salad


or just add the thin sliced beef to your favorite tossed salad


and here is a nice unusual one:

shred the meat, mix w/mayo, celery, etc maybe a touch of horseradish and use same as you would tuna or chicken salad.

chop up the meat and make enchiladas with it

9. Here's the plan.

We're gonna make beef stroganoff, hash (with potato mixed in
and eggs baked on top), and then a nice beef stew.

11. here's a mexican way to do it
Shred the piece of roast beef, and put about a tablespoon of olive oil in a hot pan. Add the shredded pieces of roast beef to the pan, and basically "fry" until the beef is crispy. Put on top of tostadas, which are tiny little flat fried tortillas, and put some chopped onions and cilantro on top with a little drizzle of salsa verde. An excellent side dish to go with this would be mexican rice and beans.

13. Barbecue !
Cube it into small cubes, add diced onions and barbecue sauce. Serve on hamburger buns with pickles. Mmmmmmmmmmm !
