| The World's EASIEST Cheesecake Pie Recipe |

I posted this originally in the "Who the Hell wants Pie?" poll, but I didn't want anyone to miss out.
3 8oz packages of cream cheese (PHILADELPHIA, please) 5 eggs 1 cup sugar 1 tsp REAL vanilla extract 1 tsp REAL fresh squeezed lemon juice 1 4oz bar of BAKER'S German Chocolate
1 GLASS Pyrex 9" pie pan enough melted REAL butter to coat the pan thinly.
Coat the pan, and store it in the fridge to set the butter.
Allow cream cheese to come to room temperature. Mix in the eggs, vanilla, and lemon juice. SLOWLY mix in the sugar.
Remove one cup of the mixture. Melt chocolate in a double boiler just until liquid. Add to the one cup of mixture, WHISKING THE HELL OUT OF IT to prevent pre-cooking.
Pre-heat oven to 325 degrees.
Pour the unreserved mixture into the pie pan. Drool the chocolate into the mixture, and create artisic swirls with a fork.
Bake around 30-40 minutes (I'm doing this from memory, Dammit) with the pan on an air gap cookie sheet in the MIDDLE of the oven. It's done when a toothpic comes out clean, AND the bottom looks golden brown.
Let it cool to room temperature, preferably in the oven with the heat off and the door cracked open. When cooled to room temperature, PUT IT IN THE FRIDGE, DAMMIT, and leave it there.
Serve COLD, with toppings if you like. We prefer home made praline, but caramel or butterscotch works well too.

I just forwarded your recipe to my daughter. She adores cheesecake of any variety. Where she works, they make a lemon cheesecake using crushed ginger snap cookies for the crust. yum
