what is your family's name for this dish?
Miz B (my stepmom) called it "Orange Jello" which it is NOT

it uses orange jello mix, heavy whipping cream, cream cheese, pineapple and grated carrots

it's got the texture of mousse

when I unpack i'll post the whole recipe, it was wonderful!

2. I don't know but
the first time I ate at DH's family's house when we were dating, his mother tried to serve me something like that. Only I SWEAR to you, I saw cocktail onions and little olives in there along with the fruits and stuff. It was so horrifying that I was rendered speechless the minute she offered it to me. I still have nightmares.

5. My mother ...
used to fix red (raspberry?) Jell-O and, when it was semi-set, whip in some softened vanilla ice cream.

Then she'd set it back into the fridge, and it was terrific.

Actually, that orange Jell-O thing sounds great.

Remember when it was printed on the box never to try to put pineapple into Jell-O? I wonder what happened to that...

6. i can remember the recipe except how much cream cheese
take a box of orange jello and drain a small can of crushed pineapple then add water to equal one cup

heat the juice/water mix until very hot but don't boil over

dissolve jello in hot water add 4 (?) oz cream cheese, whip 1/2 pint of heavy cream until stiff peaks form, gently fold into jello/cream cheese mix. then gently fold pineapple and one large carrot (grated) into mixture and chill for one hour

it was just heaven and such a nice palate clearing treat with turkey (she served it on leaves of butter lettuce as the salad)

18. It's just fresh pineapple that doesn't work...
Canned pineapple is fine in jello. Fresh pineapple reacts with the gelatin causing it to not gel. They slightly cook it in order to can it and that makes it okay.

10. My sister made that for Thanksgiving potluck
the first year she was married. But to impress the new in-laws, she decided to use fresh pineapple instead of canned...... needless to say, the jello never jelled. Oh well, they were divorced two years later so no harm done.

She subbed pecans for the walnuts because we're allergic to the walnuts.

11. My MIL makes something like that.
I believe she uses buttermilk and grated carrots. One of the few things she makes I actually like! Maybe I will get the recipe from her, make it myself sometime.

13. I honestly don't know what it's called.
I will ask next time I talk to her. It is definitely a family recipe, so I am sure they have a specific name for it.

20. My family called it ambrosia salad.
Whip the cream, fold in the carrots, pineapple; make the jello ( though I seem to recall that we used lemon) fold it all together when the jello is semi-set....

No cream cheese, though, and as the years went by, the whipping cream got replaced with cool-whip.

21. "Sunshine Salad"
Edited on Tue Dec-27-05 11:22 PM by housewolf
for it's beautiful sunny color.

My family has a "green jello" tradition - lime jello, canned crushed pineapple, marshmallows and whipped cream, add pomegranate seeds for the holidays. Quite festive! We mix the pineapple and marshmallows together for a long time, let them sit and the pineapple sort of "melts" the marshmallows. It turns into a lovely light green cloud of a salad.

But the only name it ever had was "Green Jello."

22. Y'all need to stop with the boxed jello
The plain knox gelatin and real juice is so much better - and the exact same amount of work.

28. it was sooooo good, i picked up a "jello mold" at the thrift store today
here's the exact recipe she gave me,

1 8 oz. can drained crushed pineapple, reserve juice
1 sm. pkg. orange Jello
4 oz. Philadelphia cream cheese at room temperature
1/2 pint heavy cream, whipped
1/2 c. grated carrots (optional)

Reserve pineapple juice and add water to measure 1 cup. Heat juice mix and add to dissolve orange Jello, and add cream cheese to hot Jello until all the cheese is melted. Fold in whipped cream to cheese/jello mixture then fold in pineapple and grated carrots. Mold and garnish with mandarin oranges. Chill for 3 to 4 hours before serving.

24. I like that fluffy stuff
There are lots of variations and I like them all. Every time I make Watergate salad the serving bowl empties really quickly. It's always a hit and is so easy to make.
