"Crockpot Indian Pudding"
I was hunting for a new crockpot dessert and came across this one at About.com. It's a recipe that calls for ingredients I always have around. So I'm keeping it for the day we finally get some snow.

INGREDIENTS:
a.. 3 c. milk
b.. 1/2 c. cornmeal
c.. 1/2 tsp. salt
d.. 3 eggs
e.. 1/4 c. light brown sugar
f.. 1/3 c. molasses
g.. 2 tbsp. butter
h.. 1/2 tsp. cinnamon
i.. 1/4 tsp. allspice
j.. 1/2 tsp. ginger
k.. 2/3 cup chopped dates or chopped raisins

PREPARATION:
Lightly grease crockpot.
Preheat on high for 20 minutes.
Meanwhile bring milk, cornmeal and salt to a boil.
Boil, stirring constantly, for 5 minutes.
Cover and simmer an additional 10 minutes.

In a large bowl, combine eggs, brown sugar, molasses, butter, and spices.
Gradually beat in hot cornmeal mixture; whisk until smooth.
Stir in raisins or finely chopped dates.

Pour into crock and cook on high for 2 to 3 hours or low for 6 to 8 hours.

3. I wonder what happens
If you skip the preboiling step.

You think if I just stirred it an hour or so into the cooking, that would be okay?
