I'm marinating some deer meat for jerky right now.
I had one on the ground at 7:15 Saturday morning. I use backstrap for jerky. I like it spicy with a lot of garlic powder and cayenne. I do it in the oven on 150 for about 4 hours. I try and catch it while it is still pliable.
1. Have you heard of Alton Brown's way of making jerky?
He places the strips of meat between grooved AC filters and straps them to a box fan with bungee cords. Pretty wierd. The recipe is available at foodtv.com
