Has anyone tried eggplant in chicken soup?
Last night I parboiled 8 chicken thighs and today started working on my stock. I took 6 thighs (shredded), 5 carrots, 5 stalks of celery, 2 medium onions, 1 green pepper and 2 large spoonfuls of garlic and put them in the broth from last night.
I have white potatoes peeled and chopped and will add them when the celery and carrots get soft. I will add a cup each of kernel corn, peas and green beans and am considering adding some slices of eggplant.

Good idea or no?

Also I am considering adding a cup of macaroni and in a portion of the soup will add a cup or two of tomato sauce. We may have to eat some or take some of the soup and put it in a different pot once the frozen veggies get added.

1. If the answer is yes
should I grill the eggplant first or put it in raw?

3. Eggplant has such a unique flavor
I'd experiment with a little bit of chicken broth and a few cubes of eggplant. Maybe just enough for a bowl to see if I liked it. Although I like eggplant, I probably wouldn't add it to my chicken soups.

Safeway had eggplants on sale this week. I've got two in the fridge right now. I plan on coating them with Italian bread crumbs and pan frying for sandwiches.

4. Ok, I'll leave out the eggplant
Half of my stock will be soup and the other half stew with dumplings.
Just put the dumplings on the stew before I posted.

8. My soup turn out good but we ate the stew
with dumplings tonight. I took half of my soup stock thickened it with cornstarch, and then plain dumplings on top. I'll try potato dumplings a different time.
