OK, so I had the Fiesta Shrimp Pasta at O'Charley's (it is a new menu item). INCREDIBLY good.
I have looked around for a copycat recipe, and cannot find it. ANyone here who has eaten it have something close? It has small linguine in a spicy alfredo sauce, shrimp, black been, sweet corn (roasted) and a little green pepper. Some thin tortilla strips sprinkled on top. Me and hubby love it!
I have looked around a little online, and am not quite seeing a similar recipe yet, however, I know sometimes you have to tweak them Google searches.
I will keep looking...in the meantime, any suggestion would be great.
Off to do some personal errands, but will check back later...and thanks in advance!

I am going to try it. If I can get what is in the sauce from the cook at O'Charley's, I could probably duplicate it myself.

http://www.recipelink.com/copycat.html They don't have the O'Charley's shrimp pasta recipe but do a search on "shrimp pasta" - there are about 40 and they all sound delicious!
