2. I have been salivating since yesterday on that one.

4. wow. sure does.
have you tried tempeh? Is the taste the same? I have limited experience with the different versions of the harder lumps of protein because of lack of kitchen space and appliances. ( I will slowly be trying to domesticate myself after years of life on the road)

I am cooking primarily w/ micro and crockpot and rice cooker. Amazing how creative you can be with just those !

5. Tempeh is different.
Softer, kind of smoky in flavor. Seitan is grainy and a bit bland on it's own, very much like dry chicken or turkey breast I think.

13. I just finished making and eating this.

And it is fabulous and husband is absolutely thrilled with it. I also finely minced a small shallot and put it in the skillet just ahead of the spinach. And since we aren't vegan, I topped each serving with crumbled feta and then sprinkled on the coarsely ground pepitas (roasted and salted were all I could find but they worked fine) instead of tossing them with the rest in the skillet.

One word of advice, though, is to wait for the pasta to actually fully cooked, or close to it, before doing the spinach part of the recipe or else the spinach cooks down to almost nothing. The recipe wasn't very clear on this and made it sound like you should start the spinach when you put the water on to boil.

All in all, it was as fantastic as it sounded and this is a keeper recipe for our household.
