Seriously, I like the ice wine idea. Maybe with a couple of nice glasses.

5. Smoked salmon

I like to give people smoked salmon or something consumable on a nice platter made by a local Canadian artist. Then they get something they can use right away and something to keep for later use or display. The ice wine suggestion above sounds good too.
