I'm in the middle of the Panhandle of Texas. There is a possibility they'll have azuki beans @ one of the Asian markets in the big city 20 miles away.

Mung beans I know because I worked in a Japanese restaurant for a few years. Looking up both mung and azuki on teh Wikipedia, they seem to be similar and both are used for making light sweets.

I'll give it a shot sometime. Hope you don't mind if I use Blue Bell vanilla for the ice cream. :)
