1. Depends on the rest of breakfast.
If it's eggs and grits - over easy or poached

If it's w/biscuits and gravy - scrambled

2. I like cooking a single egg, scrambled but not stirred while cooking, in a small pan
and then putting it on a small flour tortilla with a slice of cheese, coating it in Tabasco, and folding it in half like a Taco. Yum.

If I'm not doing the cooking, I'll have migas. (scrambled together eggs, spicy chorizo, onions, tomatoes, peppers, tortilla chips)

There are a couple of hole in the wall places near here that serve 'em up with refried beans, salsa, and fresh flour tortillas.

7. Sous vide
I like eggs prepared just about any way you can do it, but sous vide has to be my favorite.

The great thing about it is you can make the egg perfectly as firm or as runny as you like just by adjusting the temperature and the results turn out perfectly every time.



Here's another sort-of sous vide method which makes something a bit different, but still quite tasty:

8. I cannot eat runny eggs in any way, shape, or form
I got very sick from eggs cooked over easy when I was a kid and because of that, I'll never touch eggs except if they're scrambled--and well done--or hard boiled.

9. I scramble them in a glass bowl, and nuke em for 60 seconds.
They come out nice and fluffy. No muss, no fuss.

NO ONE ELSE MAKES THEM RIGHT! (My mom & dad did . . .)
