I had the best meal in ages
Home caught and cleaned, my dad fried catfish. The meal it was rolled in was Zatarans.

I bought a food processor today after much decision (it was on sale and not expensive) and chopped my own fries, then my own carrots, onions, peppers and everything else for the salad.

I can't tell you how awesome everything turned out. I'm looking forward to playing with my food processor more, because I want to start canning. My 106 year old aunt cans preserves, it's way time for me to learn how to do it. I live in the Deep South, so it's a tradition.

2. good for you!
Sounds delicious!

I love Zatarain's products but have never tried their meal. I will do so now.

I'm glad I didn't have to clean the catfish!

4. I grew up poor and we lived on fried catfish, bass, perch,
stuff from the garden, fresh eggs, milk and stuff we butchered. I really miss that stuff, but we eat more fresh stuff here in mexico than we did in the us after I became an adult. I love fried catfish with hushpuppies (home made).

5. Your aunts probably going to be thrilled to share her knowledge with you.
Be sure to ask her to tell you the family legends while you work. It would be great if you good get it all on video too.

6. The best use I have for my food processor is making bisquits
And pie crusts. It makes cutting in the fat sooooo much easier and you can mix them all the way to when you are ready to roll out the dough, though it's best to cool either dough mixture before rolling.

I prefer chopping vegies by hand or using a mandoline than using a food processor. But I'm only cooking for two - a larger family would make the cleaning of the food processor less work in comparison to how much work it is to actually do the chopping.
