I am looking for a great recipe for guacamole.
I thought I saw one here in the lounge a while back. I guess I shoulda copied it

1. guacamole recipe
a couple of avocados smashed with a fork
one clove of crushed garlic
sour cream
salt and pepper to taste
a few teaspoons of homemade salsa.

8. I use it for consistency adjustment. It doesn't change the flavor much, if at all.
Still, there isn't anything else I'm aware of that will serve the purpose if things are just "too thick". And who the hell ever has leftover guacamole? :shrug:

unless you're using it to fill a blintze.

I don't have a recipe, but I always put:

avocado (duh)
New Mexico red chile powder
oregano
lotsa cumin
a shit ton of garlic
a little onion
some diced tomato (canned is ok)
lime
Tapatio and/or diced jalepenos (optional)

and this is very important: a dash of worstershire sauce.

3. Wow - lots of variations. I use a "what I can get that's fresh" approach and wing it.

Avacado - obvious and required. Easiest thing to do is split it from stem to base, pull the pit, and just scoop out the innards. I don't use a blender or anything, just a spoon to scoop and a fork to mash.

Sour cream - optional. Save it for near the end if you're going to use it, and add it slowly until the consistency is appropriate.

Lime juice - to taste, and ONLY from fresh limes.

Onion - depends on your personal preference, just don't overdo it.

Tomato - ONLY fresh and ONLY if they're good ones - none of that pink pithy shit they call tomatoes in Giant and other mega-stores. Dice it to under 1/4".

Garlic - I don't think it belongs there, but a lot of people use it.

Cilantro - only fresh, and not very much.

As for the "recipe", just mix all the shit together and adjust quantities until it has the consistency you want. There is no right or wrong, just what you like.

On Edit: Low-fat sour cream is a good option and won't change the flavor at all. I've also added chopped mushrooms (crimini in particular) and received very positive feedback. Make sure whatever you are serving it with is fresh - chips, bread, etc. Stale chips will take the oomph out of ANY dip.

but I use lemon juice, add a few red pepper flakes, and to expand it, instead of sour cream, add small-curd cottage cheese.

12. This is what I do...
3 avocados
1 tomato
1 banana pepper
1 lime
garlic
small onion

Scoop out the avocados. Dice the tomato, pepper garlic and onion. Squeeze in some lime juice. Mix it all together.

I like it hand mixed and a little chunky.

13. Guacamole is a easy three ingredients in proportion to your taste.
Avocado
Salt
Lime Juice

mix and taste, mix and taste, mix until it tastes how you want. You really can't get it wrong if you like it; texture too. I like mine slightly chunky and use a fork to mix. My best friend likes his the consistency of runny pudding and uses the blender. The only thing is that it has zero shelf-life, like less than an hour so make it right as you intend to serve it.

That's the basic recipe.

From there you can add just about anything you want. I often add red onion, cilantro, cumin, coriander, and a very-small amount of smoked chipotle pepper and even less of a fresh-ground high-quality black pepper.

... is good, fully-ripe avocados. If your avocados are good, most any recipe will be fine. If not, no matter how good the recipe, it just won't taste right.

17. Guac of course, and in a salad, on your burger, and my very favorite
is stuffed avocado: chopped chicken or beef in the scoop of a peeled avocado half, flipped to bake rounded side up with monterrey jack cheese melted all over it....yummmy.

18. the black aligator skinned avocados, NOT the blah smooth green ones
(peeled and de-seeded, obviously) mashed, but chunky with fork
chopped jalepeno
lime juice
salt

that is all you need


you CAN add salsa, tomatoes (they will make it watery), onion, garlic, mayo, sour cream, cilantro or just about anything you want, but good quality ripe avocados, jalepeno and lime is all you really need

29. The smooth, green ones are only good for salads and stuffed.
And, maybe sandwiches.


I'm lazy when it comes to making guacamole. I just mash the avocados, add some salt and some garlic, usually in powdered form, because as I said, I'm lazy. I don't always have limes or jalapenos on hand.

It hardly needs anything. If it's ripe and DELICIOUS by itself, I'd add a sprinkling of SALT.


Please, NO European creams and whatever. It doesn't need to be mashed up or anything. When it's too hard, just CUT it into cubes.


Plus, a diabetic class conducted by a skinny nurse lectured for 3 days about "portions." This meant HALF a banana and a SLICE of an avocado. When it was over somebody (who could it be, who could it be?!1) dressed her down, telling her SHE wasn't skinny because of any diet but because she was BORN THAT WAY. She said she got into this biz because her kid WAS born that way. O.K., fine, there's always a riposte, ain't there.
