We defrosted a corned beef package from last St. Patrick's Day

We defrosted a corned beef package from last St. Patrick's Day
Every year we go nuts and gobble up 4-5 packages of corned beef. We freeze a couple, one gets defrosted within a month, and today we slow cooked the last for some corned beef and cabbage. The cabbage is just for show, the main course is ruben sandwiches.

Marbled rye, corned beef, swiss cheese, Bubbie's sauerkraut (If you've never had Bubbie's do what ever you can to find some), and Bob's Big Boy's thousand island dressing. Grilled in butter to toasty perfection, ahh.. there is no better sandwich in the world.

eta: Long before the band The Pogues, I saw a bumper sticker on a car near Boston that said " Pog Ma Thoin." I burst out in laughter and then slowly realized that I was the only person in our car who knew what it meant. I guess it paid off growing up in a community where many grandparents had the Gaeltacht.

4. Bubbie's is good stuff.
It's not as good as some kraut in NYC/NJ but it's damn tasty.

There may be other good brands sold out here but Bubbies is the only one we know of.

12. We grab our cornbeef at Ralph's Markets
They shelves are packed with cornbeef a couple of weeks before Saint Patrick's Day. The reason why the last two packages lasted so long was that Alley unknowingly grabbed a different brand on a resupply run. Our first indication if something off was the way the cuts were spiced. The good variety had the spices in a separate pouch. The main taste difference was that the lower quality cut was over brined and needs more then a rinse.

Of course we forgot about the difference by the time we defrosted the package.. Next year we will pay attention to what we are buying.
