Looking for Suggestions For Gourmet Tuna Salad
OK,years ago I use to work in a hotel. We made an awesome gourmet Tuna melt that was out of this world. I vaguely remember some of the items that went into the recipe.Well, I've been putting this off for a while now and decided this weekend to give it a try. All I can remember is fresh tuna steaks off the truck were grilled/cooked and then shredded. (Fresh Tuna was important and not the tuna from a can)Only other thing I remember is diced onions, chopped parsley and a little bit of Miracle Whip.Just curious if anyone else here either A) has a recipe or B) can suggest some interesting ingredients to include.

2. Here's one recipe . . . pretty basic ingredients . . .
from cooks.com website:

LON DOLES' FRESH TUNA SALAD

1 lb. fresh tuna fillets
1/4 c. chopped green onion
1/4 c. chopped celery
Juice from 1 fresh lemon
1/2 c. mayonnaise
1 tbsp. dill relish
1/2 tsp. salt
1/4 tsp. pepper

Bring tuna to boil in 2 quarts water. Then reduce heat 10 minutes, discard water and cool. Flake tuna with fork and combine all ingredients

4. Capers.

Capers make everything taste better, and they're great in tuna salad. Also, lots of fresh black pepper.

Oh, and I second a squeeze of fresh lemon. Citrus and tuna have a great affinity, and lemon juice brightens up everything.

5. I just do the basic, but with good ingredients.

Never tried it with fresh tuna.

Star Kist Albacore
Hellman's mayo
fresh minced onion (about a tsp)
fresh ground pepper
finely chopped celery
Claussen's relish (in the refrigerated deli section)

I don't like the idea of using Miracle Whip instead of mayo.

The Claussen's relish is sweet, so that adds any of that you'd be missing by using mayo.

It goes on toasted whole wheat bread with melted extra sharp cheddar, a tomato slice, shredded lettuce, banana peppers, and a dash of Maries red wine vinaigrette

7. I like diced hardboiled egg in mine - ESPECIALLY the yolk.
.
And maybe a LITTLE bit of diced pickle.
.
And maybe good dijon mustard, sparingly.

15. Forget the Dijon mustard.
.
Three good ingredient suggestions from three other people on
this thread (but keep the egg and pickle and mayo, too -- maybe
finely diced celery).
.
1. Horseradish
2. Capers
3. Celery seed
.
Ooh, ooh, ooh, ooh (doing my Horshach impression)...JUST found
this -- Greek Tuna Salad. Looks incredible and the recipe sounds
delicious (think I might go for fresh tuna rather than the StarKist
pre-marinated fillets, though).

9. Easy: Horseradish, dill pickles, onions and Best Foods mayonnaise.
Hellman's east of the Rockies I believe. Serve on toasted sourdough.

11. yeah
Yeah, I always questioned the Miracle Whip but the Chef at the time said that was the secret ingredient. SO little went in (like a spoonful)no one suspected that is what gave it it's flavor. Its the other spices I can not remember.Got some good ideas though. Thanks again!

13. Last week I made a simple one
I diced up a green onion, mixed it with my tuna and added a squirt of fresh lemon with and a dash of cayenne pepper. It made a pretty good sandwich with sliced tomato, romaine lettuce, and swiss cheese.

14. I bought some Yellowfin Tuna Salad at Whole Foods recently
and thought it was pretty decent. So in trying to deconstruct it, I saw minced red onion, parsley, minced celery, not too much mayo, some grated carrot, very finely minced garlic, and some very very finely minced pickle relish type stuff. It tasted good.

Oh, and some tuna too. :)
