So I Slow-Cooked Some Ribs, And Got Bones - Can't You Boil Them For Like A Month...
and make yummy stock or something? Seem to recall hearing about that.

Anybody done anything like this? Suggestions?

1. Beef or pork?
I would put them on a very low simmer with celery leaves, chopped onion and maybe some carrots overnight. Mmmmmmm. I'd then use to stock to make soup or use it as a substitute for the water when cooking rice or couscous.

Are you saying one more night is all that's needed for the bones? They don't seem like they're getting any softer....

I think you'd just want to get the flavor out of the marrow. You could probably cook them longer than overnight if you wanted to.
