Yeah, I tore apart a perfectly good lake trout from Diamond Lake. BUT, it worked, since the little pieces really fit in well.

Anyone want some? Its rich as all fuck, with the 1/2 cup of oil and butter I made the roux with - but the roux made a difference!

Next time I will

- learn how to cut a fish. It's been cleaned, but still, there has to be a more efficient method of preparing a trout than 'scoop out trout and try not to get a bone under your fingernail.'

- Use Less okra, less File and more Andouille

- Not use used rice (the rice is important!)

BTW - you gotta have a baguette with this! It just ain't right if you don't.
