Tomorrow.. I'm going into the woods with an ax
I want to experiment with smoking meat as a form of food preservation. Hell, the Injuns and Ingles did it! I bet they didn't have to go buy forign wood chips from Suk-mart!

Any pointers?

3. Can you tell the difference between hickory
and say, black walnut? It helps to know such things.

Do you have a smokehouse? My grandmother built one, about 6 feet by 10 feet, out of native stone. Roofed it herself. I remember her smoking bacon and ham in it.
