nooo my cheesecake has 3 small cracks.
I took it out of the oven and it has three small cracks on the sides. I will take pics when I take it out of the fridge. I am having a nervous breakdown right now. I hope it tastes good. pics will come in an hour.:(

5. oh yes, just a few small ones it's no big deal but next time try and let it cool all the way down
after the oven is off and the door is open, The one that i made was not salvageable, it just looked terrible but they told me to bring it over so i did and they ate it so it didn't go to waste. The next one turned out really well.

6. The tin of refried beans I took out of the fridge had 50 cracks...
Mind you, I left it unopened in the fridge for about a month...

As long as it tastes good; that's what counts. (the cheesecake, that is. I wouldn't eat month old dried refried beans...)

8. this is why I always put stuff on top of it
I like really thick cheesecake and they almost always crack so I just cover the cracks. :D

My top three cheesecake "band-aids":

1. thin layer of lemon curd
2. raspberry sauce
3. sliced strawberries

10. Lemon curd is a perfect complement to cheesecake
Edited on Fri Mar-20-09 02:27 PM by TommyO
Do you make your own lemon curd? If you don't, it's not difficult.

edited to add the link to Alton Brown's lemon curd recipe:

http://www.foodnetwork.com/recipes/alton-brown/lemon-curd-recipe/index.html

I've made this a few dozen times and it comes out great.

12. oh yes
I think the texture comes out better when I make it myself. Lately, instead of just a thin layer of it, I've been making what I call lemon bar cheesecake. The bottom half is cheesecake, the top half is lemon curd and I dust the top with confectioners sugar. It's pure evil.

9. All the more reason to put some fruit on top (to hide it).
I'm sure it'll taste good. That's the most important thing!
