Advice on making deviled eggs, thread 2
What does it mean to "hard boil" an egg?

Once I get that bit of information, I'm going to celebrate the expiration of the Tornado Warning by making :evilgrin: eggs. :D

1. You're joking, right?
If not, here's how I do mine:

Put a dozen eggs in a pot of water. Heat to a boil. Take them out 12 minutes after the water starts to boil (NOT 12 minutes after you first turn on the heat).

Put the pot in the sink and run cold water into it for 5 minutes or so.

Let the eggs sit in the cold water for 10-15 minutes.

Put the eggs on a dish towel to dry.

I'm generally not a fan of deviled eggs, but my ex-wife makes fantastic ones. I'm sure you'll do great.

4. Cover your eggs with water...
Bring the water to a full rolling boil.
Immediately cover the pan and turn off the heat for 12 minutes.
Put the pan in the sink and run cold water over the eggs to stop the cooking process. (No need to remove the eggs from the scalding water first.) :hi:

5. You turn off the heat? I let them boil for 12 minutes...
...just goes to show how many different ways there are to do something as simple as hard boil an egg...

11. As long as you cover them
they'll continue to cook. Someone told me that this prevents the eggs from getting that greenish tint to the yolks. I don't know if that's true or not; but my yolks have always been a nice yellow color...

7. I'm eating the eggs now.
They're yummy good!!! :D

I boiled them Goddess's way (sorry, Mercutio). The peeling was rather messy. I suspect I'll get better with practice.

For the yolk mixture, I used:

a little bit of shredded cheddar cheese
a few slices of pepperoni chopped into tiny pieces
mustard
mayo
paprika
nutmeg
pepper

It's yummy good!!! :D

14. I've found that the peeling goes better if the eggs are cold and
you hold them in your hand a minute to warm up the shell a little. The temp difference seems to help.
