Put a dozen eggs in a pot of water. Heat to a boil. Take them out 12 minutes after the water starts to boil (NOT 12 minutes after you first turn on the heat).
Put the pot in the sink and run cold water into it for 5 minutes or so.
Let the eggs sit in the cold water for 10-15 minutes.
Bring the water to a full rolling boil. Immediately cover the pan and turn off the heat for 12 minutes. Put the pan in the sink and run cold water over the eggs to stop the cooking process. (No need to remove the eggs from the scalding water first.) :hi:
they'll continue to cook. Someone told me that this prevents the eggs from getting that greenish tint to the yolks. I don't know if that's true or not; but my yolks have always been a nice yellow color...
