Would someone please tell me how to make deviled eggs?
I've eaten them at many, many, many church suppers but never before attempted to make them at home. NO CLUE what to do.

I have some eggs. Do I need anything else?

1. You should really ask a Presbyterian, but anyway

boil some eggs. peel the eggs, cut them in half, longways.

take the yolks out, put them in a bowl with some Hellman's mayonnaise and regular yellow mustard, a little salt, a little white pepper.

Keep tasting it till it's right.

If you are an Episcopalian, I believe you are required to add a tiny bit of pickle juice.

fill the whites of the eggs with the yellow goo.

Sprinkle on top with dill weed. Now sprinkle with African cayenne pepper, unless you like tasteless food, in which case use paprika.

19. As a Presbyterian, I'd like to add to DF's directions

I usually do a dozen eggs at a time so YMMV but:

About 4T mayo
1T mustard
1T of yellow (Apple Cider) vinegar
1/2t salt & pepper

Adjust the above to taste, of course

Couple things- it helps to peel the eggs under cold water- just the eggs, not the peeler, and a star-tip frosting bag is good for purtyin' 'em up- then top off as DF suggested.

20. From a Presbyterian/Reform Judiasm Household:
Hard Boil Eggs

Mash Yolks with:

Mayo
Chopped Capers
Dry Mustard
the smallest pinch of Cumin
A wee bit of the Caper juice to correct texture
Top off with Hot Hungarian Paprika


I love these things, eat 'way too many, the best thing my wife cooks.

They go good with Buffalo Wings and Celery

You need mayonaise, mustard, salt, pepper and paprika.

After you've hardboiled the eggs, let them cool. Slice them in half and place the yolks in a separate bowl. Add dabs of mayo and mustard and mash it together til you have it the consistency you want it. Season with salt and pepper. Spoon the yolk mixture back into the egg halves and sprinkle with paprika.

7. Oh yeah, I forgot!
Don't forget to peel the eggs before you cut them in half. It helps to peel the eggs under cold running water since that seems to make the shell come off easier.

6. salt the water
If you salt the water with a tablespoon of salt, it'll help keep the eggs from cracking and if they do, the salt seals the crack so you don't have a big white egg bulge. And it seems to make them easier to peel too.

10. Here's mine-
Boil the eggs, shell them. Try not to begin screaming uncontrollably when the shells won't come off. Cut eggs in half lengthwise, pop out the yolks. (Pick one or two yolks up off floor-brush off adhered cat hairs and/or dust.) Mash egg yolks, add Miracle Whip, some dry powdered mustard (Coleman's is terrif), salt, pepper, and mix. Pile mashed yolk gunk back into egg whites.
sprinkle with paprika. (And if you're an old bat like me, you may have one of those really cool old platters made especially for deviled eggs, which everyone made for picnics and parties when I was a girl.) I have always loved devilled eggs and I'm glad to see them making a comeback of sorts. This is the time of year for them, too. Great for using up all those Easter eggs.

22. I just broke my grandma's devilled egg platter!
Do they still make those? Will I have to look in antique stores for a new one?

What's worse is that making devilled eggs with grandma is one of my fondest memories of her (she made them for everything: every time we visited, neighbors coming over to return a lawn mower, church socials, Sundays, for her coworkers at the bank -- you name it, she had devilled eggs for it).

26. No, I actually saw some today.
I think that it was Target or Kohl's. Look in the housewares section of the store, where they have all the specialty stuff for Easter.

13. Start with cold water & salt ...
... put the eggs in gently, bring to a boil and boil for 10 minutes, remove from heat & let sit for 5-10 minutes. Drain & cool down in cold water, drain & add more cold water until comfortable to touch & peel. Proceed as above ...

Sometimes I add bacon pieces or diced onions or honey mustard to the yolk mixture. Experiment & enjoy!

I've seen a recipe for "Angle Eggs" that used cottage cheese. (??)

14. Oh, yum.
Never thought of adding bacon. Sounds good, but then I don't think there is any food that couldn't be improved by the addition of bacon. (Except maybe ice cream.)

12. All very good recipes..............
but on occasion I've been known to add a dab of sweet pickle relish or finely chopped jalepeno to the yolk/mayo/mustard/salt/pepper filling mix. The different variations are my own creation, but they've always been well received.

18. You might also consider....
a half stuffed green olive on top of each egg

adding finely chopped celery to the yolk goop

Adding chopped pignoles to the goop, or whole ones on top

a little cooked but chilled chopped spinach hidden underneath the goop, or on top as garnish

mushrooms

21. I like chipotle deviled eggs
Mash the yolks with a little mayo and chipotle mustard. After filling, dust the tops with a very small amount of ground chipotle pepper. If you have extra filling left over, halve some grape or cherry tomatoes, scoop out the seeds and fill.

Hard boil eggs. Peel. Cut in half long ways. scoop out yolks and put them in a bowl. Mix with a little Miracle whip and Mustard to taste...Then scoop the mixture into the yolks. Put in the fridge for a little bit...boom...Deviled eggs!

29. Just two things to add
DON'T use Miracle Whip. Makes them tooooooo sweet.

To peel the eggs more easily, drain the water off while the eggs are still in the pan, run cold water over them several times to stop the cooking, then shake the eggs back and forth until the egg shells crack into little bits. Then peel them under cold water.

Someone upthread said fresh eggs peel better. That hasn't been my experience -- usually eggs a few days old seem to peel better for me.

I like it! :evilgrin:

My mom swears by using "hot dog mustard." It's mustard with relish in it. She tops them with a cilantro leaf.

I also like a wee bit o' caviar on them too. Yum. :P

Also, it helps immensely to mix the yolks, the mayo and the seasoning in a food processor so it's nice and smooth. When I make mine I put the egg mixture into a pastry bag fitted with a star tip and pipe the yolks back into the egg halves.

Good grief...sounds like something Martha Stewart might make in the commissary of whatever minimum security prison she's bound for!
