The Sunday evening meal thread...
A few weeks ago Miz t. found a ribeye steak on sale.
Bought it on the 'sell by' date.
I call that 'aged beef'.
;-)

Trouble is, it's HUGE.
Almost 1 1/2" thick and about 8" X 5".
We'll probably make three meals from it.
Anyway, I decided it's really a roast and will grill it accordingly.

I 'larded' it with a dozen or so garlic cloves and coated it with cracked black pepper. Wrapped bacon around the perimeter.
This will be a high cholesterol entree.
:eyes:

I'll sear it on both sides (2 minutes?) on a hot grill and then move it to the high warming grill and turn the heat to low.
Baste it with a butter/garlic/Worcestershire/Tabasco sauce.
Drip pan under.
Gravy?
Did I mention high cholesterol?
I'll take a couple of Lipitors tonight.

Add a baked sweet potato (25 cents a pound!) stuffed with cheddar and bacon and an avocado and tomato salad.

What's going on at your place?

6. My favorite of all meals.
Homemade tomato sauce with Italian sausage crumbled and cooked in it with meatballs served over whole wheat angel hair pasta, with mixed green salad, and homemade wheat bread. :9

We'll see. I've not put potatoes or carrots in green chili before -- but it sure smells nice.

Oooh, your dinner sounds very yummy!

I'm making my justly famous lamb pozucon!* Never heard of it? Hehehe...

I invented this recipe myself...

Leftover leg of lamb, cut up into pieces
1 onion, chopped
1 zuccini, chopped
1 baked potato, chopped

I saute the onion, zuccini and the potato in butter. Then I add the lamb, some dill weed and whatever other spices I like...

Cover, heat and eat when ready!

It's yummy!

15. Louisiana style Shrimp and Eggplant Casserole
based on an Emeril Lagasse recipe:

Tonight I'm making a Louisiana shrimp and eggplant casserole based on an Emeril recipe:

Ingredients

* 4 tablespoons oil
* 1 medium eggplant, peeled and cut into 1-inch pieces
* Salt
* 1/2 teas cayenne
* Freshly ground black pepper
* 1/2 cup chopped onions
* 1/4 cup chopped green bell peppers
* 1/4 cup chopped celery
* 2 tablespoons chopped garlic
* 1/2 pound medium shrimp, peeled and deveined
* 1/2 teaspoon dried thyme
* 1/2 teaspoon dried oregano
* 2 cups water
* 2 tablespoons chopped parsley
* 1 cup dried fine bread crumbs
* 3/4 cup grated Parmesan

Directions

Preheat the oven to 375 degrees F.

In a large frying pan, over medium-high heat, heat the oil. Add the eggplant. Season with salt, cayenne, and black pepper. Saute for 2 minutes. Add the onions, bell peppers and celery. Saute for 2 to 3 minutes (until softened.) Add the garlic, shrimp and dried herbs and water. Cook for 3 minutes. Remove from the heat and stir in the parsley, crumbs, and 1/2 of the cheese. Pour the mixture into a greased square casserole dish, top with remaining cheese and bake for about 45 minutes or until bubbly and golden brown.

I thought my little schmear of butter on a grilled pork chop was over the top:rofl:

We had a fresh pot of pintos (ham bone for flavor) and corn tortillas baked crispy with cheese. Chopped sweet onion and salsa.

18. Home made quick & dirty spaghetti
Costco has organic tomato sauce now! Just found it today -- It is too salty but passable for a cheap meal.

Steamed:
3/4 of a whole batch of organic celery
1 whole clove finely chopped garlic
1 too-small yellow onion
1 whole chopped shallot

3 tables spoons organic vinegar
21 drops dark stevia extract
1 tablespoon organic marjoram
1 tablespoon non-organic oregano

2 cans organic tomato sauce
1/2 cup water added at the end

On plate:

plop big pile of spaghetti (Costco didn't have angelhair today : (
Glob with about a half cube of butter
pile about four tables spoons mild cayenne all over it
stir it up
pour spaghetti sauce over it
sprinkle with Parmesan cheese

Chew carefully so you don't accidentally go get a second plateful which you will find out you really don't need. (Save that for breakfast in the morning YUMMERS!)

For dessert: 1 cup coffee with hot cocoa mix in it.

21. I had Taco Bell.
:hide: I didn't want Taco Bell...I was walking to Subway on my meal break at work but it was too cold (CT today in Southington, CT at 7PM: about 25'F with wind chill.) and I forgot my coat so I settled for the Bell because it's closer. I had the new nacho thing with no taco meat and extra jalapenos. It was pretty good for bad fast food Mexican. The refried beans were only kinda pasty and the guacamole tasted like guacamole. The crispy taco shells they use for a bowl is actually pretty good even by the more stringent standard of comparing it to real Mexican food.

23. Chicken Cacciatore
Made with some thighs I bought today. Into the brasing liquid I added some leftover spaghetti sauce that SHE had made. I also cut some leftover cabbage into wedges, and steamed that in the same pot. I served it with some spaghetti noodles.
