1. Cheese curds are great - and they only seem to be available in Wisconsin.
California produces enormous quantities of cheese, but try finding cheese curds for sale in California. Only very rarely can you find them and then only in tiny, out-of-the-way places and then only for a very high price. In Wisconsin they're all over the place. Personally I like the orange cheddar ones, not the rubbery white ones.

2. Squeaky cheese!!!
The whole point of eating cheese curds is to get them the day they are made, before they are refrigerated and they squeak when you eat them. Best. Cheese. Ever. Oh, and I am a bona fide Cheese head, Wisconsin bred for 6 generations so I know cheese.

3. Last time I visited Wisconsin,
(a week after 9/11 and the plane was nearly empty) my friends knew I liked cheese curds so they went to the local cheese factory and got some for me. They were good, but they were the squeaky rubbery kind, and frankly I like the "phony" cheddar ones better. But they are very rare in California.

4. the farmer's market in Pleasanton
has a cheesemaker that sells curds. i will have to try them next time i go.

7. Or you get them out of the fridge and wait 20-30 minutes
(if you can) before you eat them. They sweat just a little bit of whey and SQUEAK like nobody's business. The St-Guillaume stuff is packaged in the grocery store, so it's fresh every day.

I missed the stuff. Got the s.o. hooked on it too now. :P

9. We had 'em in Iowa.
But most of them that I saw were from Wisconsin; Shullsberg (sp) to be exact.
