Poll question: Bon Appetit's Smoked Turkey, Blue Cheese, and Red Onion Sandwich


Ingredients

* 1 1/2 tablespoons olive oil
* 2 8- to 10-ounce red onions, cut into 1/3-inch-thick rounds
* 3 1/2 tablespoons red wine vinegar
* 6 cups trimmed large arugula leaves (about 4 ounces), divided
* 3/4 cup mayonnaise
* 8 1/3-inch-thick slices seeded wheat bread (such as La Brea Bakery) or four ciabatta rolls, cut horizontally in half
* 12 oz thinly sliced smoked turkey
* 3/4 cup coarsely crumbled blue cheese (such as Maytag; about 3 ounces)

Preparation

Heat oil in large nonstick skillet over medium-high heat. Add onions and sauté until soft and lightly browned, breaking up onion rings, about 8 minutes. Remove from heat; stir in vinegar and season to taste with salt and pepper.

Chop enough arugula to measure 1 cup; place in medium bowl. Mix in mayonnaise. Season with salt and pepper. Spread about 1 1/2 tablespoons arugula mayonnaise over each cut side of bread. Divide turkey slices among 4 bread slices. Top with crumbled blue cheese, dividing equally. Top with red onions, then whole arugula leaves and bread.

Maybe I could substitute sour cream? I love blue cheese!

2. yum but don't fry the onions
they'll be too mellow and sweet if you cook them, with the sharpness of bleu cheese you need raw onion.

5. Or how about smoked turkey, brie and spicy mustard? That's a favorite of mine
on your favorite hearty bread. Heated in the oven is even better. Add mixed baby greens after heating.

For the mayo. Otherwise --- mmmmmmmmmmmmmmmmmmmmmmmmmm!

Judy's "Oven Fried" Ham sandwiches

1 package thin-sliced Tavern or other good quality ham
1 package thin-sliced swiss or gruyere cheese
1 medium vidalia onion, sliced thin
1 loaf onion rye bread, sliced
honey mustard
garlic butter (available in tubs in dairy section)

Thinly butter one side of rye slice. Place buttered side down on cookie sheet. Top with ham (folded over to fit bread), squirt of honey mustard, slice of onion and slice of cheese. Butter another slice of bread, and lay it on top, butter side up. Continue until you run out of something (usually the cheese). Vidalia onions are sweet enough you don't have to pre-cook them.

Pop cookie sheet in 325 oven. Bake until bread starts to brown and cheese is melting, about 15 minutes. Consume carefully - the honey mustard tends to squirt out and burn your tongue like molten lava if you don't let the sandwiches cool a bit first. Can be refrigerated and reheated in microwave if you've made too many.
