What's for Dinner, DU?
I'm soooo excited. I'm making Huevos Rancheros. Salsa Fresca, tortillas, cheddar, eggs, and black bean sautee. I've been craving it all week, and my darling husband is on his way to the store to get the ingredients. w00t!

How about you? :hi:

We have a great restaurant here that serves a delicious Chilaquilas for Sunday brunch. I may have to convince the better half that we have to go there tomorrow. Mmmmm.

Chilaquilas - authentic dish of three soft scrambled eggs, tomato, chile, corn tortilla & chorizo sausage sauce, grated cheese, sour cream, black beans

30. Oh, it is very good.
One ripe mango, chopped; one avocado, chopped; 2-3 jalepenos, diced fine; about a dozen springs of cilantro, chopped fine; 1-2 tbsp. orange marmalade. Mix.

4. I have no idea what to make. I just killed the afternoon watching Ocean's 11
(the original - and a great way to kill an afternoon it is!) and haven't even thought about dinner.

I'll have to see what's in the freezer.

65. Eating is good.
We did finally have dinner. I fed the kids early, around 5:30, and Mr. LIW and I had pork chops and grilled zucchini a little while ago. He just put the kids to bed while I did dishes, and we're going to have spice cake with mocha whipped cream for dessert. Later? Martinis on the deck!

But I'd like to let you know that I sang this to my husband today, who is from Mexico, in an oddly impromptu way in order to "honor" his heritage:

La cucaracha! La cucaracha!
Ya no puede caminar.
Porque no tiene
Porque le falta
Marijuana que fumar.

Then we had some huevos rancheros. It was just like the time I spent with Walter Cronkite on the beaches of Cabo San Lucas...
