Italian Sausage Pie - yummo!
This was super easy, and pretty good.

I cheated and bought one of those Pillsbury roll-out crusts they have in the dairy section at Kroger.

1 cup ricotta
half a bag of baby spinach, washed, dried and torn up
1 cup of shredded mozzarella
1 cup of shredded asiago
half a cup of grated parmesan
4 eggs, beaten
1 pound of trader joe's chicken italian sausage (it comes fully cooked), cut into bite-sized pieces
1 clove garlic, crushed
salt and pepper to taste

So yeah, just mix everything together, saving one egg yolk for later.
Pour the filling into your crust-lined pan, then top with the...top crust. :) Brush on the egg yolk, then cook in a 375 oven for 50 minutes.

1. Yuuuummmm!!
Anything with asiago is a winner in my book!!

I'd maybe substitue the Italian with some other sausage. I don't like fennel seeds x( (unless the TJ version doesn't have 'em).

2. I hate fennel seeds too, but they weren't in quantity in the TJ sausage
Kroger carries a turkey Italian sausage that doesn't have fennel but does require pre-cooking. I think I will try that next time. I also will cover the pie with foil for the first half hour next time, so the crust doesn't brown before the insides are fully set. :)

8. Oooh, ok, I had a new idea
Jut heating up the leftovers for lunch, and had a flash - next time I will replace the sausage with chicken, and maybe throw some Italian seasonings in. It'll be like an Italian chicken pot pie. :)

9. Chicken sounds good!
I'm not a sausage fan at all. Thanks for the recipe! It looks like it's got a fair bit of protein in it, that's good for me. :)

I can't handle that much cheese with sausage but it's got a good basic structure there.
