I can't bring myself to buy any though, because of the nitrates and also because I can't eat it anymore - too much fat.

I just bought the springform pan today. Can you wait? And come to Texas? I don't deliver. (Although I will be at the Sea-Tac airport December 28. Cheesecake'll be gone though.)
