toasted w/ olive oil, sun-dried tomatoes and garlic on top. :9

I normally don't eat bread, but this stuff is hitting the spot for some reason.

7. Mexican Chicken Casserole Recipe
preheat oven to 357
spray an 8 or 9 inch pan with non stick spray

Ingredients:

1 onion diced
2 cloves garlic, minced
2 tsp olive oil

2 cups diced cooked chicken
1 10 oz can Enchilada sauce
4 corn tortillas, halved
1 tsp ground oregano
1/2 cup pepper jack cheese (reduced fat if possible)

saute the onion and garlic in the oil. When the onion and garlic are soft, add the cooked chicken and enchilada sauce, and simmer until it begins to thicken. Add the ground oregano..I added a little cumin to mine too, because I like it.

place 4 tortilla halves overlapping on bottom of dish, pour 1/2 of the chicken mixture on top, then sprinkle 1/4 cup of the cheese over the chicken. Repeat, topping with cheese. Cover tightly with foil, bake 15 minutes, then remove the foil and bake 5 more minutes.

Makes 4 servings, WW Points = 6

8. sounds good!
instead of the canned enchilada sauce, try making your own. It is way better. (see my OP in the cooking forums for tips) The canned stuff, well, taste like cans....

11. Oh I will sometime try that, my native Mexican niece-in-law has
promised to teach me, we just can't find the time together. <sigh> However, I use the HATCH brand, which is far less metallic and is made with Hatch Chiles. YUM.

this is one of those handy dishes you can pull out of your pantry which does not require reduced fat cream of mushroom soup!LOL

5. I recently tried Adobo on chicken, Mexican food section.
It is really thick paste.

I added chicken broth, orange juice, lemon and lime juice to make a marinade.

I also added some chipotle peppers.

I cooked it with bell peppers and onions.
