What should I bring to the potluck dinner?

What should I bring to the potluck dinner?
One person is bringing inari sushi, another is making a chicken club brunch ring (chicken salad, bacon, veggies in a crescent roll dough ring). The host is making a cake, and his wife can't have onions or garlic.

Maybe a fruit salad?

I'd love to hear your recipe suggestions, too!

1 can black beans, drained and rinsed
1 can black eyed peas, drained and rinsed
2 cans shoepeg white corn, drained (or 2 cups frozen)
1/2 cup chopped cilantro
1 bunch green onions, chopped
1 can rotel diced chillis (tomatos or use fresh)
1 bell pepper any color
1 clove garlic, minced
1/2 cup pickeled jalapenos to taste (a lot for me and I do not drain all the juice)
1 tsp Lime juice
1 cup fat free Italian dressing
1 talbelspoon garlic which you can leave it out for your friend's wife.

The great thing about this stuff is you can substitute fresh ingrediants wherever you want. Combine everything then dump the dressing over the top and leave it overnight in the fridge.

I don't have a recipe either, but you just cook some ground meat - no onions, throw in some peas, mash pototes and cheese on top.

Or - I make a cheeseburger lasagna.

Use the Ready for the Oven noodles. Use sloppy Joe sauce for the meet, and cheddar cheese instead of mozzarella.

Easy, and everyone loves it. :D You could remove the onions.

INGREDIENTS
1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese
DIRECTIONS
In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

whenever we got invited to a potluck, my dad would say "we'll bring the tuna jello" just to get a reaction from people. Now we all use that line.

honey to make some extra juice and add a pound cake, shortbread, angel food or just 'nilla wafers on the side to put in the bowls first, spoon fruit over (whipped cream too?)

31. I agree about a fruit salad.
Use fresh strawberries, blueberries, diced apples, pears, 'nanners, or any other kind of fruit you like (that isn't citrus) and then toss it all with a vanilla yogurt.

Very easy and quite yummy. Added bonus, I think th fruit doesn't get dark as fast in the yogurt coating.

33. cold roasted asparagus would be good
rinse the asparagus, snap off the tough ends
spray a large cooky sheet or baking pan with PAM

mix together 2 Tbsp lemon juice, 2 tsp olive oil and 1/2 tsp crushed red peppers

spray the asparagus with PAM, then add the lemon juice mixture and stir to coat the asparagus with the mixture, then spread it all out in the roasting pan in one layer and cook at 425 degrees for about 5 to 8 minutes

Good hot, but lovely chilled.

you can add to this red bell pepper, thinly sliced summer squash, purple onion, if you like.

Another good on is to lightly steam brocolli, cauliflower, or asparagus then marinate with your favorite vinagrette style dressing and serve.

Or just a really good tossed salad, just have the onion on the side and make your own oil and vinegar type dressing..oil, vinegar, dry mustard powder, salt, pepper.

I know, I just keep pushing the yogurt thing--but it is so easy to work with and actually good for us--ya know?

Anyhow, if the wife can't deal with onion could she maybe deal with chives? Those would add a nice flavor...
