Friends, Romans, Lounge Lizards, lend me your ears! I need a recipe for a good rice dish
New Beau (tm) is turning 40 next week and I'm making a special birthday dinner. I'm making grilled tequila shrimp and I need some ideas for sides. I was thinking some kind of mexican rice dish but I don't know what. The shrimp has lime, jalapeno, cilantro and tequila. Anyone have a recipe idea?

1. just made one with orzo

It's very relaxed so you can adjust things to your personal tastes.
1 red pepper seeded and diced
1 jalapeno pepper seeded and finely chopped (if you like it spicier, don't remove all the seeds)
2 cloves garlic minced
1 large onion diced
1 cup corn (either fresh off the cob or frozen)
2 plum tomatoes seeded, cored and chopped
1/4 tsp cumin
1/2 tsp chili powder
1/2 tsp paprika
1/4 - 1/2 tsp red pepper flakes
kosher salt & black pepper to taste
chopped cilantro to taste
olive oil
1/2 cup vegetarian stock
1 cup uncooked orzo

Cook orzo according to directions while preparing the veggies. In a large saute pan, add olive oil and saute peppers & onions till tender crisp. Add garlic and saute another minute. Add corn and all spices except cilantro, saute for about 30 seconds. Add vegetable stock, bring to boil and reduce for about 5 minutes till stock is almost gone. Remove from heat. By this time, your orzo should be cooked. Rinse & drain orzo and add to vegetables. Stir to blend all. Adjust seasonings to taste, add cilantro & tomatoes, toss and serve. This dish is great hot or at room temperature so it's perfect for making ahead of time.

3. The one I was going to suggest has cilantro and lime in it

4. Pineapple Fried Rice
My own Recipe

Cook rice, using sesame oil and salt. After it cools a bit refrigerate rice for several hours or overnight.

To prepare, heat pan with cooking oil to a med-high heat.

Add:

Chopped garlic and Chopped fresh ginger

Stir fry for a minute

Add chopped green and red bell pepper

stir-fry some more.

Add cold rice

stir fry some more

Add WELL DRAINED pineapple pineapple nibblets (or chunks cut in half) and a splash of soy sauce.

Stir fry some more.

Serve with chopped spring onions (green part) and Honey Roasted Almonds slices sprinkled on top.


Goes great with Caribbean-style seafood.
