Isn't hydrogenated oil "trans fat"?
I just bought these crackers and the box is emblazoned with "NO TRANS FAT!" "HEALTHY WHOLE GRAIN"

The second ingredient on the label is partially hydrogenated cottonseed oil. Isn't anything hydrogenated already a trans fat?

1. Anything "partially" hydrogenated would be a trans fat
Under the current law, a food can have up to 0.4 g of trans fat per serving and still be considered to have "0 g" of trans fat.

2. My thoughts too..
but the SECOND ingredient? Sounds like it would be more than 0.4 g of oil, considering the first is probably flour.

3. I don't think all partially hydrogentated oil is a trans fat
I think that the hydrogenation process changes some of the unsaturated bonds to be a trans bond - see http://www.cfsan.fda.gov/~dms/qatrans2.html#s1q3 . Perhaps their process manages to not change too many bonds into a trans bond.

I use it and it is great stuff. Made my scones and soda bread delicious.
