And I thought I was *so* smart...
I threw some ribs and sauce in the crockpot this morning, thinking how pleased I'd be tonight when I had nothing to prep for dinner except side items.

About an hour later I remembered that we're meeting my Mom for birthday dinner at the pizza place tonight.

Will they be good tomorrow, if I cook them today and then reheat them?

should be fine. anything longer than one day, and I'd bag it and freeze it.

Cool them down and put them in the fridge. They should be O.K. tomorrow. Add a little moisture if they look dry while reheating.

this is coming from a guy who's useless in the kitchen, but kicks ass on a grill. I find that ribs from a smoker (using the so-called Minion method) that are cooked five or six hours come out way better than traditional grilling.

And, more to the point here, slow-cooking them allows them to soak up all the flavor of the sauce. When you then set them aside, all full of flavor, and let them rest overnight, they're absolutely spectacular the next day.

I've never made ribs in a crockpot, but I'm guessing the principle is the same.

11. Reheat them on the grill
That's how I cook mine, overnight in the crock pot, finish on the grill. Gives them that bit of smoky taste, but still fall off the bone tender.
