3. Here you go -
8 ounces each Gruyere, Emmentaler, and Freigberg Vacherin
1-lb loaf of white, sourdough, or onion bread
1 garlic clove
1-1/4 cups dry white wine
1 tablespoon cornstarch
6 tablespoons kirsch
Pepper
Freshly grated nutmeg
Lemon juice (optional)

Trim rind from cheese; coarsely grate cheese or cut into small cubes. Cut bread into bite-size cubes. Peel and halve garlic; rub the inside of the fondue pot with it. Pour wine into the fondue pot and heat slowly. Gradually add cheese, stirring constantly with wooden spoon. Let cheese melt over low heat, then bring to the bubbling point. Stir cornstarch with kirsch until smooth, pour into cheese, and let bubble. Season with pepper and nutmeg. Stir only until thickened and smooth, stirring in a little lemon juice if necessary. At the table, keep fondue hot on the burner over a small flame (I have an electric fondue pot). Have bread ready. Stir the cheese mixture while dipping the bread to keep its consistency creamy.


**My note: I only used 4 tablespoons of kirsch and added a whole extra cup of wine. It's pert' near perfect now.

12. I want some!
but I'm having trouble imagining kirsch with cheese. That and I'm too cheap to want to buy kirsch for no other purpose than to make fondu. Do you think it's essential to the recipe?

13. Cheap cheese fondue
1 cup beer (dark is nice but Bud will do)

Heat in a fondue pot with some chopped garlic and a few dashes of Worcestershire sauce. When it's steaming add a mixture of grated extra sharp cheddar and swiss (1/3 swiss 2/3 cheddar...about a cup to a cup and a half in total) that has been tossed with a tablespoon of flour. Stir until thick. Dip bread chunks (or, if you've got a bit of extra money that week, some broccoli florets) and enjoy.

clearly I have made no new year's resolutions in regard to cholesterol or fat :evilgrin: Thanks for posting that recipe. I think my NY's resolution is going to have to be to visit the cooking forums here on DU, I've gotten a bunch of good recipes from DUers.

17. I've made a similar recipe substituting wine for the kirsch

14. 6 tablespoons seems like a lot of Kirsch for that.
I jumped internally when I read that. I'm glad you took it down to four. I would have taken it down to three, but it sounds like four was the right amount.

2. Glad to hear that someone has had a good experience with
fondue! The last time I made a fondue, the joke was that it was a fon-don't. It burnt to the bottom of the pot because there was no way to regulate the heat. It stunk up Nite Owl's house!

4. This is an electric fondue pot.
We just got it for Christmas, and I've never made fondue before. Once you set the pot to its holding temperature, it will self-regulate. The pot is also non-stick. So far so good!

6. I will have to ask Santa for one of those next year!!
The one that I have is stainless steel, you heat it with Sterno, and there is a permanant burn mark on the inside of the pot. It isn't pretty!

7. That sounds like a pot for fondue Bourguignonne, rather than cheese fondue.
Does your fondue pot look like this? If so, it's not for cheese fondue. Cheese fondue normally is made is a ceramic pot that's heated on the stove (traditional) or by electricity (like Left Is Write uses). :hi:

11. the fondue restaurant here sucks cause it's all about the phony hip appeal...
you can easily pay upward of $200 at a sitting for what amounts to just playing with your food :shrug:
