4. They're fresh beans...
I don't think they come into contact with anything remotely animal, except bean-picker hands.

2. *Snort!*
You've gotta be careful with those black-eyed-peas; sometimes they stuff them with horse meat.

1 pound dried Black eyed peas (1 package)
water
ham hock (I use salt pork, no bone)
1 mediunm chopped onion
1 teaspoon salt ( i usually don't put the salt in because of the pork)
1/4 teaspoon black pepper
1 cup of rice (I add what i think is enough rice)
1 tablespoon margarine (I use butter)

Soak peas overnight in 3 cups of water. Drain measuring water and adding enough to make 3 cups. In large saucepan bring soaked peas ,
water, ham hock, onion, and salt to a boil. Cover and simmer 1 and 1/4 hours or until peas are tender and only a small amount of liquid remains .
Remove meat from bone if desired. Add to peas with pepper. Cook rice according to package (I use Success rice)
Add margarine I use butter) and mix with peas.....
