There's a big ol Turkey on my counter....
Whew! Outta the brine, rinsed and dried, sitting like a champ waiting for the big game...After last night's squash massacre, I'm feeling pretty good...The brine bag didn't leak, and the turkey didn't fall on the floor...Yay! :bounce:

And yes, this is all being documented in pics...to be posted later... :D

1. Your lucky....
TWO of my brine bags broke. All over my tiny apt. kitchen floor. Yes, having a great ol' time. :D Fortunately, a canning pot was big enough for both the turkey and the fridge.

The turkey is now safely in the oven. Four pies made and ready to be baked and spice cake in the oven. Only thing left to do are the potatoes in their various forms and the veggies. Whew! Nearly done.

What type brine did you use? This was my first time doing it as well. Little nervous. I also did a honey, beer and butter injection. Here's to hoping it all comes out well. :toast:

3. I used Williams-Sonoma Apple & Spices Turkey Brine
I ordered it a month early because they always run out. You can make your own. Here are the ingredients:

rough sea salt, apple pieces, juniper berries, lemon peel, star anise, garlic, rosemary, thyme, black pepper, onion, bay leaf

10. If you had a big enough oven,
You could always make 2 12lb-ders too...Younger bird, more tender meat, or so I hear. :)
