Why is it when you take a few days off they bury work on you before and afterwards???

2. Because they don't actually understand the concept of "day off"
It's rigged against you - if you take a day off, you have to complete the same amount of work in less time (actually, more work, because everyone takes your absence as a chance to dump their crap on your desk), but if you finish your work faster than expected you don't get to go home early... It's the system, man, the SYSTEM!

... means you don't have to show up. The amount of work you must get done remains the same.
