5. I have read about this pie in other books and just finished reading
"Fair and Tender Ladies" by Lee Smith. She makes mention of this pie in the story and I wanted to know just what the ingredients were. I'm going to my book club discussion this evening and will bring along the recipe to share with the others.
I hope to make it sometime.
Seems to be a very old and southern dish.

6. I from the South and
live there now. I'm not familiar with this. I'll have to ask my 89 yr. old grandmother. I bet she's heard of it. Man can that woman make biscuits.

2. I have one downstairs that is really good
this one seems close...but, I don't ever remember using lemon flavoring in the pie...just eggs, butter, flour and vinegar-

Here is the one I found:

Vinegar Pie Recipe
Submitted by nccook on Mon, 2005-05-30 11:31.

Ingredients:

1 cup of water
2 eggs
2 tablespoons of vinegar
1 cup of sugar
2 tablespoons of flour
1 tablespoons of butter
1/2 teaspoon of lemon extract
1 9-inch baked piecrust

Mix together the sugar, water, eggs, vinegar, and the flour in the top of a double boiler. Cook, stirring constantly until the mixture is smooth and thick. Remove the mixture from the heat and stir in the lemon extract and the butter. Pour into the baked piecrust and let cool. Top with whipped cream if you like.

3. Here's one
INGREDIENTS:
3 egg yolks
4 tablespoons all-purpose flour
1 cup packed brown sugar
1/8 teaspoon salt
1 teaspoon ground allspice
1/4 teaspoon ground mace
1/4 cup cider vinegar
2 cups warm water
1/4 cup butter
1 (9 inch) pie crust, baked
3 egg whites
1/4 teaspoon salt
1 teaspoon cider vinegar
6 tablespoons white sugar
1 1/2 teaspoons cornstarch
DIRECTIONS:
In the top of a double boiler, beat the egg yolks well. Combine the flour, sugar, 1/8 teaspoon salt, allspice, and mace and blend into the egg yolks. Add the 1/4 cup cider vinegar and mix, then add the warm water. Simmer over boiling water for 25 minutes, or until the mixture is thickened; the water should just reach the bottom of the top pan.
Stir in the butter and cool slightly, about 15-20 minutes, without stirring. Pour the warm filling into the baked shell; set aside to cool.
Preheat the oven to 325 degrees F (165 degrees C). In a large mixer bowl, beat together the egg whites, 1/4 teaspoon salt and 1 teaspoon cider vinegar until soft peaks form. Gradually add the 6 tablespoons of sugar, 1 tablespoon at a time. Continue beating until stiff peaks form; sprinkle in the cornstarch just before the beating is completed. The peaks should not topple over when the beater is raised.
Spread the meringue over the filling all the way to the edge of the pastry. Bake for 15-18 minutes, or until the meringue is golden brown. Cool the pie completely and then refrigerate.

"Fair and Tender Ladies" by author Lee Smith. The book makes mention of 'vinegar pie' and I was curious. I had heard of this pie before and wanted to learn about it.
