Anybody got a good duck recipe?

I got a whole duck from Whole Foods and it's defrosting right now.

I would like to do something special with it. Any ideas?

5. I've got one for lunch tomorrow.

I'm just going to roast it (N.B. always roast on a wire rack over a roasting tin - they drop half a ton of fat, this can be saved and used for other things such as roast potatoes if desired).

I'm not so keen on orange sauce with duck - though it is definitely traditional.

13. Ha! Let me tell you about my day crawling all over

the place looking for a wire rack. I was looking for one of those V-shaped racks. I tried two grocery stores, A Tar-jay, and still no rack.

I did find a stacking rack at Tarjay that I'm going to use tomorrow. But I'm going to have to suck it up and go to a speciality cooking shop to find one of those v-racks. Rats. I was so hoping to stay away from the mall.

7. when cooking duck, my husband makes an incredible.....

....honey curry glaze that is to die. He also makes stuffing to go with it that includes apples and walnuts. If this sounds good to you let me know and I'll dig out the recipe.
