Lunch with billyskank
Peel and dice 3 medium potatoes; boil partly.
Wash and chop half a medium head of cauliflower and 1 medium head of broccoli.
Heat 5 tablespoons oil; add 1tsp cumin seeds.
Fry cumin seeds until they pop; then add potatoes.
Add 1tsp garam masala.
Add 1/2tsp ground turmeric.
Add ground paprika & cayenne pepper to taste.
(By now the spice and oil should have become a nice paste).
Add cauliflower.
When cauliflower starting to cook, add 1 half-sized tin of chopped tomatoes and an equal volume of water.
When it comes to the boil again, add the broccoli.
Add salt and hing (asafoetida) to taste. (If you don't like asafoetida then use onions at the beginning instead).
Add 1/4tbsp sugar to take the sharpness away from the tomato.
Simmer until all the veg are cooked. Should take about 10 minutes.
Serve with basmati rice or chapatis.
Serves 2.

golden raisins, soaked until they're plump again ...
cashews
shredded coconut
ghee
& Indian spices

an excellent snack ... meant to be chewed 100 times ...
