Get Some Instant Mashed Potatoes
When you start to make them, put some cumin, paprika, chili powder, onion powder and a bullion cube in the water.

Now you're going to have some instant mashed Mexican potatoes! Goody goody goody!

4. Cook the chicken separately and add it later, if you want
Hey, you just gave me an idea. Then we could fry the Mexican chicken-taters into cakes in the skillet and throw some cheese on top.

6. I like BikeWriter's idea, too
Throw in some veggies and chicken, or something after the potatoes are made.

Some people might not like the consistency, though, I guess.

I've tried a lot of different brands, Barbara's taste almost real.

13. A lot of people laugh
when you tell them you eat instant 'taters. If you make them almost firm enough and wait a few minuets, then add some more dry, they will get little lumps. Just like real ones.
Don't ever try to make little balls deep fry them though. They fall apart. A real mess.

Honestly, it is getting more and more difficult to find a good fresh potato that hasn't started turning green under the skin and is way too sweet.

Not to mention the fact that I'M TOO LAZY to make real mashed potatoes. ;)

18. The green ones were picked too early...
stores have to let them 'ripen' like they do bananas. I never buy potatoes in a bag...always pick them out of the bin. Instant ones SUCK big time!!!

24. To each their own, but if it I couldn't find
any decent potatoes, I'd skip the mashed potatoes. I just can't stand instant.
