Looking for recipes for Chicken sald or Tuna salad
I love both! Problem is the ones at the grocery stores SUCK!Anyone have any recipes they wish to share?I've taken an interest in cookinglately & my girlfriend tells me I'll make someone a good wife someday(she thinks she's funny!)Okay, I'm hungry!

1. here's one...
marinate chicken for 6 hours in water and sea salt.

bake chicken.

cut into big chunks (half a thumb size)

Mix with 4 part mayo and one part tarter sauce (trust me)

salt and pepper to taste.

Pickles/celery/onions optional. Add in quantities suiting your preference.

2. Here's one from Emeril I'd make
Curried Chicken Salad with Mango and Papaya
Recipe courtesy of Emeril Lagasse

Ingredients
1/2 cup dry white wine
1/2 teaspoon salt
1 tablespoon black peppercorns
1 lemon, halved
1 teaspoon coriander seeds
1 whole chicken breast (bone-in, about 1 1/2 pounds)
1 small ripe mango, peeled
1 small ripe papaya, peeled
1 bunch of watercress (12 ounces) cleaned and stemmed
Salt and pepper

For the Curry Mayonnaise:
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon curry powder

1 tablespoon finely minced shallots
1 teaspoon honey
1/2 teaspoon white wine vinegar
Juice of 1 lime
2 slices of lime-garnish
1 tablespoon chopped cilantro

Directions
In a small sauce pan, combine wine, salt, peppercorns, juice of 1/2 lemon and coriander seeds. Add the chicken breast and enough water to cover. Bring to a boil, reduce the heat and simmer for 15 minutes.
Turn off the heat and allow to cool for 15 minutes. Meanwhile, make the dressing. In a bowl combine mayonnaise, sour cream, curry powder, shallots, honey, vinegar, lime juice, and season with salt and pepper. Slice the papaya and mango into wedges and squeeze the juice from the remaining lemon half. In a small bowl toss watercress with just enough dressing to coat the greens. Divide onto two entree plates. Arrange the papaya and mango on top of the greens and around
the border of both plates. Remove chicken from the liquid and pat dry. Remove each breast from the bone and slice into 6 slices. Toss chicken with 2 tablespoons of dressing. Arrange atop the greens. Garnish with lime slices and chopped cilantro. Drizzle with additional dressing.

For dressing I like equal parts mayo and Kraft Miracle Whip, add a pinch of sugar. Amount of dressing depends on amount of cut up chicken. A little diced celery, and I love to add sliced, seeded grapes. To get exact amounts I would have to measure the next time I make it.

If chicken not previously seasoned, salt and pepper to taste.


Edit. Tuna would be the same but haven't tried that with grapes.

5. same thing with tuna, just substitute diced apples for grapes.

10. Grapes are a great addition to chicken salad
I also like toasted almond slivers in my chicken salad. Another fun twist is to mix your mayo with some blue cheese or roquefort and some garlic, makes for a little more interesting binder than just ordinary mayo.

4. If I make CS from scratch
it's chicken, onion, celery, perhaps some bell pepper if I have it. If I need to stretch it, I add a cup of cooked rice.

For dressing it's Miracle Whip, LOTS of sweet pickles cut in small cubes, celery seeds, about a Tblsp of mustard, salt and pepper to taste.

6. Here's a few

Chicken Melon Salad
I love this chicken salad. The combination of sweet, juicy melon with tender chicken and pasta is irresistible and very refreshing.

1-1/2 cups orzo pasta
3 Tbsp. oil
3 Tbsp. orange juice
1/2 tsp. salt
4 cups cooked, cubed chicken
1 ripe cantaloupe, cut into 1" pieces
1 cup sliced celery
1 cup red grapes
1 cup mayonnaise
1 Tbsp. milk
2 Tbsp. orange juice
1 cup cashews

Cook orzo as directed on package. Drain, rinse briefly with warm water, then drain thoroughly. While pasta is cooking, combine oil, orange juice, and salt in a large bowl and blend well. Stir cooked and drained orzo into this dressing. Add chicken, cantaloupe, celery and grapes.

Combine mayonnaise, milk, and orange juice and stir to blend. Fold into chicken mixture. Just before serving, add cashews.

13. The Albacore already has plenty of Mercury, thanks....
OK, here's one that's very easy, and very good....
Can of Tuna in Oil. Julia Childs once said that Tuna in Water wasn't fit to eat, and I agree.

Open can, drain, dump contents in bowl, "fluff" with fork.
Heavy grind of coarse black pepper, Some minced onion (either fresh or reconstituted)
Splash of Lea and Perrins, splash of Tabasco,
Coupla dollops of Miracle Whip, fold it all together, but not so much that the Tuna disintegrates.

Lightly toast some wheat or whole-grain bread, Slice of Swiss chees, big dollop of the tuna salad.

Ummm, Ummm, GOOOOOD!!!!

8. Good for any receipe
Use a whole smoked chicken or a smoked turkey breast from the meat department (Not sandwich meat). It's easy, you don't have to cook it and it adds oh so much flavor.

raisins, 1/2 cup
mayonaise till moist enough for you

11. another good one..
cook chicken breasts in olive oil...as they cook, sprinkle them with salad supreme ..(schilling/mccormick spice)

drain on paper towel and cool..

slip them into a cuisinart ..give it a couple of blasts to break the chicken into bite-sized pieces..


In a large mixing bowl, combine chopped celery, chopped onion, some chopped sweet pickles (very few)... mix in chicken and sprinkle more salad supreme... add mayo and stir til you get the consistency you like.. dry..less mayo..creamy..more mayo..

It's the best we have ever had.. yummmmmmm...I think I will go make some :)

Just got my taste of Carthrage cook book(lot of the Gore's family receipes)& my Bill Clinton cookbook! Nothing like good ole'southern cooking!I'll share some receipes with everyone when I find some tasty ones!Thanks again!
