Easter is this Sunday - Post your favorite rabbit recipes
We're planning on having rabbit this Sunday in honor of Easter. Help me figure out how to cook it.

1. rabbit is good..
Had my first taste of it when I was in 4H for rabbits ironically. I wish I had some good recipes for you, but that was over 10 years ago.

One suggestion I have, is rabbit is fantastic breaded.

2. Lightly breaded with salt and pepper in the flour and fried in
in butter. That's the way my mother prepared it more than a half a century ago when I was growing up on the farm. But I think she probably boiled it a little first to be sure it was tender as she did a hen.

5. Bunnies are nice, but they're also delicious
Growing up, my mom always used to joke about catching and cooking the Easter bunny (this was after we stopped believing). I thought it would be a nice tribute to her to actually do it, metaphorically speaking.

6. Beer Braised
Edited on Wed Mar-23-05 09:20 PM by notadmblnd
dip your rabbit in flour and brown it in a frying pan with a little oil or cooking spray. Add a half can of beer and 1/4 cup of Hinze relish (not green pickle relish) but the bottle that is red. Simmer till tender, served with baked potato and your favorite veggie (asparagus is nice this time of year) and enjoy that easter bunny.

on edit: the beer removes any sweetness from the relish and makes a wonderful gravy for that baked potato
