12. true -- "chicks in eggs" are quite the delicacy in some places ...
But in North America, people prefer unfertilized eggs which have been kept in storage for up to a month. (True -- by the time you get your eggs from the grocer's refrigerated shelf, they're probably at least 2-3 weeks old.)

14. Good idea! I'm pleased to report that "my" hens have started to lay.
These are the chicks I hatched out last year. They now live on a friend's farm -- she says that for the past couple of weeks, she's been finding little "shooter" or "beginner" eggs (usually without the yolks). They'll get bigger as the hens mature, and then she'll start sharing them with me ...

17. They taste so much better.
And they are healthier.
Also, all the meat I buy is from local farmers. I have a big freezer in my basement. A couple of friends and I will go in together on a whole cow or a hog. The farmer will take it over to local packager for us. We pick it up from there and freeze it until we need it. It really does have a better taste.

I'd love to buy my eggs locally, but to be honest I don't really trust the farmers who sell eggs in my neck of the woods.

I buy only organic, free-range eggs. Is there any way to tell if local farmers are humane in their treatment of their chickens? I guess I have to tour the place, but most of the places near me seem like they'd as likely shoot me with their shotguns as let me tour their farm because I'm a freaked out vegetarian who wants to assure their "livestock" is being treated well.

or maybe I'm just being paranoid.
