The hairy little verminous bastards have taken up residence under my sink!

I keep a very clean kitchen, since bugs really freak me out and I live in the south (warm, moist air = big bugs). I have a very old house in which the kitchen is not original, so there are some problems with the foundation. Last night, I opened my cabinet door next to the sink to pull out some dish soap and I found a whole pile of rat shit. EW! How the hell do I clean that up?

1. Just killed a big one in my garage today

Actually it was last night. I put out poison. I really killing any animal but this guy was getting destructive eating and knawing at my dog's huge food container, the floorboards, sheetrock, etc... We get field mice all the time that I trap in these special "house" traps that allow animals to go in but they can't get out, but this rat was way too big. My best advice is poison if you have no animals or kids that could get into it.

2. I'm calling an exterminator

I took apart my kitchen to ensure no other ratly activity. It seems to be confined to the sink area, which is an exterior wall. I'm most concerned over how to clean up the rat shit, since I know rat shit can contain a lot of nasty virii, such as Hanta.

3. Get a cat to live with you! If the

rats smell a cat anywhere nearby, they'll stay far away. Seriously.
This is why the Egyptians treated cats like gods and goddesses, because the cats kept the mice and rats far away from the storehouses of grain - and so, the cats were the defenders of Civilization, because Civilization depends on stable supplies of grain.
Oh and I said "get a cat to live with you", not "get a cat."
You can never "have" a cat. You can only agree to live with one :-)

6. Ah, then you have Super Rats. So, you must take

extraordinary measures!
You must think like a Nazi, about rats. You must become ruthlessly genocidal.
This means, you must get THREE CATS! :-)
On edit: And like a good N.A.Z.I (the acronym means: "No Awful Zoological criminals allowed In this house") you must call your house, "The Ratskiller!" Like the German "Ratskeller", but a place where all Humans have equal rights and rats have none!
