MONDAY, MONDAY! Good Monday everybody and welcome to Mondays 'IN' The Undergroundrailroad. How is everyone feeling after the weekend? Well, I'm glad you stopped in because we're going to jump-start your week with lots of love and hugs. Your going to *feel* the love down 'in' the Underground

Our dessert today is warm, moist and sweet Banana Pudding ! To those who are dieting or just plain eating healthy, it's all about the portion sizes. So just take one of the small glasses I have prepared above. Don't worry you'll be alright with that! Of course we have coffee, tea, (hot or cold) and water. So grab your goodies and let get right to it, let's go check out the daily.

It's *YOUR* time to walk on the red carpet ! Now work it DU!

B. SMITH, DOING IT WITH STYLE 'IN' THE UNDERGROUNDRAILROAD


*THINK* of Martha Stewart's catchphrase, "it's a good thing". *THEN*, augment *THAT* with this catchy phrase: "doing it with style !" Well that "style" would be that of B. SMITH, and yes, she is a VERY GOOD THING!

Today we roll out the red carpet and invite B. Smith into the UNDERGROUNDRAILROAD! B. Smith with Style is a nationally syndicated weekly lifestyle television show airing in over 200 markets representing 95% of the US and 40 countries. The primary focus of the show is to provide viewers with easy, affordable suggestions to make-over and personalize their own style around the home. Now in its 6th season, B. Smith with Style touches on such subjects as home entertainment, gardening, craft and design with celebrity guests. During the show, B. provides her viewers with an intimate view into her life and personal style. Many episodes are filmed in her own kitchen, garden, living room and restaurants. And be prepared, Ms. Smith has a global eclectic style that takes her show all over the world to give viewers a proper perspective and insight on how ethnic dishes are prepared and why.

B. also invites celebrities like the Queen of Hip Hop, L'il Kim, Marsha Mason, Sheryl Lee Ralph, Paul Sorvino, Leslie Uggams, Hal Linden, and Montel Williams. What B. will do is research their favorite dishes and then prepare them using her magic touches (think of a before and after makeover). Ummmmm, OH!! it HURTS SO BAD when B. and her celebrity guests moan and groan with Belicious delight.

ALSO, B. Smith enjoys extraordinary success in the publishing world. Her initial publication was a quarterly newsletter that included recipes and lifestyle information that attempted to capture the style of a B.Smith restaurant. These newsletters later evolved into B. Smith's first book, B. Smith's Entertaining and Cooking for Friends (1995). In October 1999, B. Smith released her second book B. Smith Rituals & Celebrations published by Random House.

One recipe that I tested was her Hibiscus Tea Punch and it was power packed with visions of cool breezes, sandy white beaches and palm trees ( Hibiscus Tea Punch ).

To learn more about B. Smith check out her website, bsmithwithstyle.com. I urge everyone to just catch her show at least once. I know you'll love B. Smith as much as I do. In the meantime, message to B. from Undergroundrailroad . I like baked chicken with apricot glaze, pecan salad, collards and homemade yaki bread with sun dried tomatoes. Yeah, it's a Sistah thang.

GIRLFRIEND, GIRLFRIEND. THAT'S WHAT FRIENDS ARE 4

OPRAH AND MARIA SHRIVER have been "best friends" for 27 years according to several articles on the WWW. They have cried and laughed together during the good times and the bad. Well, Maria may need that shoulder to cry on after that disaster of a show last Monday.

Well for starters, Arnold needs to wash his mouth out with soap (do they have soap in the green room?). I mean what's up with going on OPRAH, a family friendly show, (yeah Arnold, when after school students hit the TV!) and telling OPRAH, in the presence of his wife Maria Shriver, that years ago he considered a "pump is better than come**g (sex)" (why Arnold, your a REPUBLICAN!). Maria slapped his mouth yelling "my mother is watching this show!" Oprah looked a little puzzled, but she finally 'got' it (in her ear piece, I think) while the audience continued laughing. Oprah asked him about group sex and "the parties". Maria looked a little uncomfortable as she shifted from side-to-side on Oprah's coach (how appropriate!). Finally Maria told Oprah that her husband loves her and is "supportive" of her broadcast career. Besides, Arnold greets Maria every morning with coffee that he personally makes himself (Yeah, RIGHT!) and "tells me that he loves me." (*YAWN*). Is this the best Arnold can do to show the love ?

Oprah, get those girlfriend skills ready, your soft shoulder and a box of tissues. Arnold is going to LOOSE!

I made a conscious effort to avoid the Arnold/Maria/Oprah schmooze fest last week. Thanks for confirming that I missed nothing of value... Honestly, how can ANYONE in california take Mr. Schwarzenneger seriously? In all of the appearances I viewed, before my BS-ometer sacrificed itself in a shower of sparks and acrid smoke, he never offered more than pandering and meaninless platitudes. I feel sorry for him as I think he's being used a giant tool by the Republicans, and if not being directly set up to fail, being used to insult the intelligence all people of voting age.

As for Ms. Smith, I can't say I am familiar with much on the lifestyle side of column writing. Everytime I read that stuff I look around at my little rented house and scratch my head... until it bleeds.

Recipes however, I have, and in abundance :)

In answer to this weeks excellent questions -

1. Give B. Smith your favorite dish for a recipe makeover! What would it be?

Portuguese style roast chicken. Rub the chicken over with paprika, choppped red peppers, crushed garlic and diced onions. Add two tablespoons of white wine to the pan. Stuff with boiled rice seasoned with tomato, garlic, and parsley. Line the pan with peeled potatoes. Bake at 20 minutes per pound, then for the last 20 raise the rack and broil the top until very crispy.

Appetizer, traditional Caldo Verde and fresh portuguese bread. Desert, traditional Flan pudding.

Yummy yum-yum.

2. What is your favorite Chinese take out ?

Egg Foo Yong with lots of that indescribable brown gravy.

3. What are you wearing right *now* for your walk down the red carpet?

Jeans, and a threadbare Spawn Tee-shirt.

I DO feel the love at the UGRR! You said the nicest things about me last week. That was so sweet! :hug:

YOW! B.Smith is HOT! Matskaboska! Yowee-zowee! Okay, enough. I'm not thirteen.

Okay, I'm not much of a cook, but here goes:

1. Biscuits and gravy, Army-style.

I use Pillsbury Pop 'n' Fresh biscuits. Warm 'em up in the oven until golden brown. Brown ground beef in a frying pan until sizzling. Pour off half of the grease. Add milk, flour and Worcestershire sauce until gravy is thick and gloppy. And salt and pepper to taste. Pour over biscuits. Eat. Yum!

2. Mongolian Beef with cellophane noodles, sliced ginger, and scallions. Oh boy!

3. Right now, pajama bottoms, slippers and a tee-shirt. I'm still sick, so this is my recovery gear. Glamorous, don't you think?

It like we're all in one giant :grouphug: group hug on Mondays and we don't want to let go. Monday is a sure thing for all of us down here and I love feeling that love.

Isn't B. Smith workin it with style! She used to be a model and she is very attractive.

Yummy indeed and looks simple to make. Aristus, this might turn out to be dinner to night for my household. I like that little Army Style caption, that's cute.

Well, hello BigMcLargehuge! Before I go any further, I want to let everyone down here know that you are one of the regulars in the Undergroundrailroad on Mondays. But now *YOU* are to be congratulated as one of the new DU Lounge Moderators! Applause, applause !


Now back to your comments on Arnold/Maria/Oprah. I wonder how many BS-o'meters went off in the minds of the American people? I also agree with you. The Republicans are using him, BIG TIME, as Maria sits back and watches this? It's almost as if the Republicans KNOW he's going to loose and their next campaign line will be something like, this is what happens when your a Republican in Democrats clothing. Now, as I look at CNN, Davis is actually doing well in the polls.

OK, now your recipe makeover is :

Now, BigMcLargehuge (I love that name!) is on the red carpet in jeans and a threadbare Spawn Tee-shirt. OK, make your turn. Looks good!

I am so glad you described that sham Oprah show. I tried to watch but I just could not handle it. The best thing was the news shows barely covered it because that was the day the appeals court delayed the repuke power grab vote--aka the recall. I wish all DUers could see the commercials Arnie runs. They are funny but scary when he might be our next Governor. He's going to audit all the state finances and that will solve the state's problems. Message to Arnie, California has state agencies which audit the expenditures every year. Arnie talks about the state losing business and jobs. Message to Arnie, California has lost less jobs (percent job loss) than the US average under the Bushistas. I could go on and on, but Arnie and Maria AND OPRAH are despicable for enabling this right wing power grab. I'll save the rest for GD. ;-)

On a lighter note, I love B. Smith. She seems more practical than many of the other lifestyle mavens. On to the questions:

1. Fruit salad, of course.

2.I love this shrimp combo thing at our local Chinese restaurant. I don't get it often but it is delicious. It contains a sampling of shrimp specialities. Yum.

3. Jeans and a t-shirt. It's early out here and I'm working at home.

14. Good Monday Cally, the red carpet is out for my sister!




Good Monday Cally! Before we begin with the questions, I appreciate your serious tone regarding the recall election in CA. I agree, the show WAS a sham (that was the word I was looking for Cally) and I am very disappointed in Oprah's participation in partisan politics on what is supposed to be a life-style show. What kind of message is Oprah sending here??? What about equal time for the Democrats? Did anyone catch Oprah at the beginning of the show when she said that she was dancing with Senator Hillary Clinton in South African for Nelson Mandela's birthday. She actually said that twice. Two words came to mind: ***MEDIA WHORE***. Oh, btw Cally, I have seen those 'scary' commercials in CA (I have Dish Network and you can view all West Coast programs). In one, he is sitting down in a classroom talking to what looks like 6-7 year olds, telling them the power of the people is paramount, while the kids look ahead with blank stares on their faces. Really, they are scary! Excellent Rant Cally, excellent!



Now, I have found fruit salad for us to share.

Your Chinese take out is, shrimp combo samples of different shrimp specialities. I love shrimp!

And for the red carpet? Casual today in jeans, t-shirt and your beautiful smile! :)

I love Rosa Parks. She is my heroine. Just a woman who was taking care of business and just decided that she had to take a stand. She embodies strength, courage, and just the ordinariness of women and men who change the world. Every interview I've heard just makes me like her more.

I think I'm going back to a Cali theme for the buildup to the recall vote. She'll be back, though.

I hope your son is OK.

36. Yes, he's fine. The cat scan was negative. I did have to do the 24 hour
watch.

I was in awe of Rosa Parks. Actually, at the time she took her bold stand, not many people wanted to stick with Rosa Parks. It was out of fear. Loss of a job, fear of injury. It is just so difficult to think Cally, that we lived in an era such as Jim Crow. We need more people like you Cally, that can tell the story. They don't even teach African-American studies in all High Schools in the US.

Well, I just heard that the recall decision will be announced at 9AM Tuesday. I think the decision will be overturned. The point was about those punch card ballots Cally. The equipment in the minority areas do not measure up :( It is really about the chads and the equipment that is in poor condition.

Then I heard the judge talking about re-counts standards in CA ('we don't have a FL problem here') Yeah, RIGHT! , AGAIN :(. I just love that you care about those issues Cally!

Your correct about Maria and AHNOLD. I think Maria looks the other way or whatever. I also don't think he's going to win, but Oprah should have given the other candidates equal time. I think she gave Al Gore time on the show in addition to *. Well, Oprah, get the 1,000 dollar box of tissues out ;-)

My wife likes B. Smith with Style. Why do they put her on in the wee hours of the morning? Martha's show is on around 10AM and B's show is on at 5AM. Equal time? I think B. Smith is a great cook and she has lots of five star restaurants. So the next time I'm in NY I will check her out. But thanks for the information on B. She is quite a lady.

Now on to your excellent questions:

1. B. could you please make over my short-ribs of beef? I need that little extra something to accompany those short ribs.

2. Favorite Chinese take-out? Shrimps with Chinese vegetables.

3. Oh, I'm strolling down the red carpet with a dark money green suit, dark green tie, white oxford shirt and black tim loafers. TAKE MY PICTURE, TAKE MY PICTURE, TAKE MY PICTURE and kiss, kiss, kiss :hi: How's that Mina ;-)

Thanks for those kind words. They are very much appreciated !

Wow! Lot of DUers were offending with the "sham" (Cally's word) Oprah show. I wonder if her feedback was negative. Or does she even care.

Moving on, I see your wife is a fan of B. Smith and her program. I once wrote a letter to the network regarding the time slot of her show on the east coast. Her show is very good and I can't understand why it is on at such an odd hour. I always adjust my alarm clock to make sure I've got my coffee on and waiting for B. Smith.

OK, You need a B. Smith makeover with Short Ribs with all the trimmings. Let me see if I can find a good recipe for you.

Your favorite Chinese takeout is Shrimp with Chinese Vegetables! That is always a healthy dish minus the white rice which I *must* have with my takeout.

Wow, BJ, looking good on the red carpet today! Dark "money green" suit, dark green tie, white oxford shirt and black tim loafers. OK BJ, smile for the camera :) FLASH, FLASH, FLASH!

So you like to eat out! Well, it just so happens that UGRR LOVES dinner reservations and tables with candles. SO I'm with you ikojo !

Your favorite Chinese take out is hot braised chicken. I'm looking at my dinner menu for my local Chinese takeout and I don't see that. Would it have another name? i like chicken and would like to sample that!

OK, you love Banana pudding !! Very good. Although you might need a B. Smith doing it with style make over of your lasagna. I'll go and check our her web site and see what I can find.

You like General Tso's Chicken. I have tried that but it is so sweet! Then you have the white rice. Wow, lots of carbs and sugar, but I have to admit, it is very good.

OK, now let me roll out the RED CARPET FOR GOPisEVIL!




Now, we have GOPisEvil on the RED CARPET with a blue and white checked dress shirt, blue tie (sorry * ain't allowed on the red carpet) olive khakis, grown belt and shoes.

7. Hello Mina and Good Monday to you. Great Daily!!
I have B's book, "B. Smith Rituals & Celebrations". I would urge everyone to go and purchase the book. It has many ideas for the holidays and it's a beautiful coffee table book to give as a gift. Thanks Mina for inviting B. Smith in the Undergroundrailroad today, she is a truly unique lady and I love the way she ends her show, "thank ya Dan" to honor her husband. It was not always easy for B. Smith.

OPRAH, I watched a little of that interview. Mina, what did you think? Arnold looked uncomfortable on the set. Thats what I picked up. I doubt that Oprah will give equal time to the other candidates. This was her best friend(s) and I think she did it as a favor to help Arnold and Maria. I'm a little disappointed in Maria Shriver. I don't know why and I can't explain it. So now let's move on.

Questions:

1. My favorite dish is Mac&Cheese. B. could help me "makeover" my old OLD version of Mac&Cheese. Also, how to make herb fried chicken using the real herbs.

2. Favorite Chinese Food: KungPaoChicken.

The pudding looks lovely and, you're right, it isall about the portion size. I'm likely to try a taste of anything (except maybe liver) because I find if I deny myself something I'll want it all the more. So thanks for the SMALL seving of banana pudding. :)

I've been called "Martha" before because I do a lot of crafty things. I'm the worst housekeeper though! I've seen B. Smith a few times and I like her "style".

I can't watch Oprah; she annoys me. I'm glad I didn't see the Ahnold episode. Thanks for the rundown.

Now for the questions:
1. I would love to have a recipe makeover for spaghetti carbonara. The way I make it includes the pasta, eggs, 2 different cheeses, and italian bacon. Yumm but fat and cholesterol city!!!

2. I love szechuan anything - pork, chicken, beef, shrimp.

3. You always ask the "what are you wearing" questions when I have the wierdest things on. I've been trying on clothes from my closet (most are too big! Hooray) and right now I have on a burgundy turtleneck dress and I'm barefoot. Makes for a gorgeous red carpet moment! :D

Well thank you very much for complimenting my dessert for today. I consider you MainDem the Undergroundrailroad's official fitness guru!


So, without further ado, the red carpet please for Maine Dem!



Today, MaineDem walks-the-walk in a burgundy turtleneck dress! Shoes not necessary because the carpet is new and there is nothing like the feeling of soft thick carpet between pedicured toes ;-) Oh, matching nail polish on the toes I forgot to add.

Now, let's get back to Martha, who I love! So, you have that Martha-esq touch also. Very nice or should I say "that's a good thing!".

As for OPRAH :( yes, she annoys me too. It's so funny. Today everyone is saying to me, thanks for the update and I'm glad I didn't watch it!

Now to the questions:

You would like a recipe makeover for spaghetti carbonara. With less fat! OK, I'll check this out in my B. Smith cookbook.

As for take out, you love anything szechuan! Pork, chicken, beef and shrimp. I also love szechuan food. Not all Chinese take-outs prepare szechuan food. I am fortunate, I have a takeout that delivers and the food is excellent.

(1) My favorite dish? There are so many, especially since I live with an incredibly fabulous, creative chef. I've never seen this show by B. Smith, but it sounds quite interesting!

(2) Don't care much for Chinese takeout generally. But I do have some favorites, like steamed dumplings.

(3) Jeans + slate gray wool(?) shirt. Normal work fare for me.

Is B. Smith REALLY visiting or is this just advertising?

(I have spent time at B. Smith's with Augusrt Wilson and Lawrence Fishburne and Lloyd Richards and Douglas Turner Ward as well a Keith David -- though I never met HER)

My story is longer but I make an awesome vegetarian chili that will curl your toes and satisfy the cravings for carne without the carnage.

I also dig etouffe, chile rellenos and fish courtbouillion.
