It's pork chop night
I'm making pork chops, red beans and rice, and spinach for dinner. Who all should I set a place for? :)

KFC night. I can't help it-we're just men! We don't know any better...

They included the mashed potatoes/gravy and those delicious biscuits while I cooked a pot of purple-hull peas this afternoon as another side.

Yours sounds JUST as enticing, though. I love pork chops and spinach makes me weak-kneed. Sounds wonderful! Maybe next time!

a bushel of speckled butterbeans...They're my two favorite things about southern food!

37. If you deep-fry PROPERLY, it's not that unhealthy.
The oil has to be hot enough so that it sears the outside and seals it up good, so that extra fat doesn't permeate the whole thing. Of course, it can't be so hot that it burns....

Tricky thing, deep-frying.

23. Well, tonight's solution...

is to use the Smithfield pre-cooked pork chops and then follow the instructions for baking them. Pan-frying them works pretty well too (but I don't fry anymore because of my diet). The other solution is to bread 'em and either fry or bake them. Traps the moisture inside.

340 calories. Swear to gawd. 130 for the pork chop. 180 for the red beans and rice. 30 for the spinach. GO ME!

Here's the best ever way to do it

Get the best kraut you can get. The bagged kind in the fridge section is far better than the canned.

Rinse it well in a col lander. Rinse it again

slice and brown a large onion in butter (I like to use the sweet ones)

Add the drained kraut and a half a cup of white wine


Cook for at least a half an hour until very soft

(You can also cook the onion with some bacon for an even more sinful side dish)

Yum.

up perfectly good pork chops and red beans & rice with spinach for? It is edible raw, but that's it, in my experience. If you have a good recipe, I'd like to try it.
