I'm Jewish. Happy holidays is fine, even though Chanukah is one of the most minor holidays of the Jewish calendar.

It's not even as high as Purim. It's really low.

Wouldn't that mean that the fundies should start by wishing the rest of us a Happy Eid, Blessed Yule, Happy Hanukkah, Blessed Ahsurah, etc, etc, on our holidays?

That's pro-active, not reactive. That means YOU go first!

Does that mean I'll wait until they start wishing me a happy Eid or Ramadan before I start wishing them a merry Christmas?

No, I'm a Muslim, and our prophet (pbuh) said that the believer wishes for his neighbor what he himself wants, so I'll follow my religion and wish you a Merry Christmas, because I would like you to someday want for your neighbors what you want for yourselves. :)
