37. People eat organs and parts most of us don't want to eat.
Take beef. We use heifers and steers for our main steak and roast needs. We don't use cows or bulls. Those are boned 100%, and used for ground meat. The organs and other parts harvested but less in demand are liver, kidneys, tongue, heart, brains, stomach and tail. And, of course, Mountain Oysters, aka bull nuts.

Almost none of a cow that is butchered goes to waste. The guts are sold to a rendering plant. The hides become leather. The head and hooves are the only real waste.
